1 1/2 tb Sunflower oil 3 oz Kidney beans; cooked 3 oz Bulgur; cooked 3 oz Brown rice; cooked 3 oz Mushrooms; sliced 3 oz Carrots; sliced 1 oz Scallions; chopped 1 oz Tomato sauce 1/2 ts Oregano 1/2 ts Salt 3 oz Spinach leaves Preheat oven to 350 degrees. Lightly grease 4 x 8 baking pan with sunflower oil. Combine all ingredients together except spinach leaves. Mix well. Transfer to a baking pan and place in oven for 20 minutes. Simple Lentil Tabouli | Cooking
Tabouli is a classic middle eastern salad, but this version offers a vegan twist. The perfect lunchbox idea for kids and parents! ????

Ingredients:
✅ 1 Can Lentils (Drained & Rinsed) ✅
1 Bunch Of Spring Onion
✅ 200g Cherry Tomatoes
✅ 1 Bunch Of Fresh Flat-Leaf Parsley
✅ 1 Bunch Of Fresh Mint
✅ Extra Virgin Olive Oil
✅ 1 lemon
Method:
1. Finely slice the spring onions, halve the cherry tomatoes, pick the parsley and mint leaves and
finely chop herbs.
2. Place all ingredients in a bowl adding olive oil and lemon juice to taste. Season with
himalayan salt and black pepper.
