Sambar is a popular south Indian curry. It goes well with idly, medu vada, dosa etc. We already have seen 2-3 sambar recipes. Today’s recipe turns out perfectly like the one that we get in hotels. It gets nice color, texture and consistency. We are making it in minimum efforts. It looks nice and tastes just awesome. This is a very and simple method. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 cup Tur dal
• 1 1/2 cup Water
• 2 tbsp Oil
• 1 tsp Mustard seeds
• 1 tsp Cumin seeds
• 1/4 tsp Hing
• Curry leaves
• 1~2 dry Red chilies
• 1/2 tsp Fenugreek seeds
• 1 sliced Onion
• 1 chopped Tomato
• 1/2 peeled and chopped Bottle gourd
• 1 chopped Carrot
• 4~5 pieces of Drum stick
• 1 cup Water
• 1 tbsp Sambar masala
• 1 tbsp Coriander powder
• 1/4 tsp Turmeric powder
• 4~5 tsp Tamarind pulp
• Gudh to taste
• Salt to taste
• 1 tbsp Red chili powder
• Water to adjust the consistency
Method:
• Wash turdal really good 2-3 times with water and add water.
• You can add 2-3 tsp moong dal for thickness if you want.
• Close the lid and cook on medium to high heat until pressure is built up in cooker.
• When steam begins to release from the cooker and cook on low heat for another 10 minutes.
• Beat the cooked dal really good.
• Heat up oil in a pan and add mustard seeds.
• When mustard seeds pop up add cumin seeds and let them splutter.
• Add hing, curry leaves, dry red chilies, fenugreek seeds, onion and everything together for
about 3-4 minutes.
• Add tomato, bottle gourd, carrot, drum stick and mix well.
• You can use pumpkin in place of bottle gourd.
• Chop all the veggies in same size so that these will be evenly cooked.
• Add water and mix well.
• Cover and cook veggies on medium heat for about 10-15 minutes.
• When veggies are cooked well add cooked dal, sambar masala, coriander powder, turmeric
powder, tamarind pulp, gudh, salt, red chili powder, water and mix well.
• Simmer sambar on medium heat for about 10 minutes. Sambar is all ready.

Sambhar is a definite part of South Indian meals. Sometimes, they make it even more than once a day -- for breakfast and later for lunch or dinner. Brimful of the goodness of toovar dal and assorted vegetables, it is nutritious everyday fare and is so versatile that it can be taken with rice, idli, dosa, vada, upma, and just about any south Indian snack.
Preparation Time: 15 minutes. Cooking Time: 20 minutes. Serves 6.
¾ cup toovar (arhar) dal
2 drumsticks (saijan ki phalli / saragvo) , cut into 3 pieces
½ cup bottle gourd (doodhi / lauki) cubes
2 tbsp oil
1 tsp mustard seeds ( rai / sarson)
6 to 7 curry leaves (kadi patta)
2 pinches of asafoetida (hing)
½ cup chopped tomatoes
8 small shallots (madras onions)
2½ tbsp tamarind (imli) pulp
3 tbsp sambhar masala
2 tsp chilli powder
A pinch of turmeric powder (haldi)
Salt to taste
2 tbsp finely chopped coriander (dhania)
1. Wash the toovar dal thoroughly and drain.
2. Combine the washed dal and 2 cups of water in a pressure cooker and pressure cook for 3 whistles.
3. Allow the steam to escape before opening the lid.
4. Blend the dal using a hand blender till it is smooth and keep aside.
5. Combine the drumsticks and bottle gourd with 1 cup of water in a deep non-stick pan and cook on a medium flame for 4 to 5 minutes or till the vegetables are soft. Keep aside.
6. Heat the oil in a deep non-stick pan and add the mustard seeds, curry leaves and asafoetida and sauté on a medium flame for a few seconds.
7. Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
8. Add the cooked bottle gourd and drumstick, shallots, tamarind pulp, cooked dal, , salt, sambhar masala, chilli powder, turmeric powder, salt and ¾ cup of water, mix well and bring to boil and allow to cook on a medium flame for 2 t o3 minutes, while stirring occasionally.
9. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
10. Add the coriander, mix well and cook on a medium flame for 1 minute.
Serve hot.

Ingredients for Instant Sambar
Tuvar Dal - अरहर की दाल - 2 tbsp
Bottle Gourd - लौकी - 1 small piece
Pumpkin - कद्दू - 1 small piece
Carrot - गाजर - 1 small piece
Tomato - टमाटर - 1
Drumstick - मुनगा की फली - 1
Green Chilli - हरी मिर्च - 2
Ginger - अदरक - 1 tsp, grated
Turmeric Powder - हल्दी पाउडर - 1/2 tsp
Salt - नमक - 1.5 tsp
Sambar Masala - सांभर मसाला - 2 tbsp
Kashmiri Red Chilli - कश्मीरी लाल मिर्च - 1/2 tsp
Tamarind Pulp - इमली पल्प - 2 tbsp
Coriander Leaves - धनिया पत्ता - 1-2 tbsp
For Tadka:
Oil - तेल - 1 tbsp
Mustard Seeds - सरसों - 1/2 tsp
Fenugreek Seeds - मेथी दाना - 1/4 tsp (optional)
Asafoetida - हींग - 1/2 a pinch
Curry Leaves - कड़ी पत्ता - 10 - 12
Red Chilli - लाल मिर्च - 2
Kashmiri Red Chilli - कश्मीरी लाल मिर्च - 1 pinch
How to prepare an Instant sambar?
1. Wash and soak 2 tbsp of arhar dal/Pigeon pea in lukewarm water for 20-25 minutes.
2. Chop bottle gourd (lauki), pumpkin, 1-tomato, carrot, and 2 green chiles into bite-size. Take a drumstick and cut it into 1 or 1.5 inch pieces.
3. Take 1 tbsp of tamarind/imli and soak it in 1/2 cup of warm water for 30 minutes.
4. After 20 minutes, add soaked dal and 1 tbsp of water to the mixer and grind the dal coarsely.
5. Add coarsely ground dal, 1.5 cup of water, chopped veggies, 1/4 tsp of turmeric powder, 1.5 tsp of salt to the cooker.
6. Cook the sambar for a whistle.
7. Mash the imli and filter out the pulp using a strainer.
8. After a whistle, cook the sambar over low heat for 2 minutes. Once cooked, take the sambar out on a plate.
9. Add 1 more cup of water, 1/2 tsp of red chili powder, 1 tbsp of sambar masala, 1 tbsp of grated ginger, some chopped coriander, 2 tbsp of tamarind pulp to the sambar, and cook it for 3-4 minutes.
11. Take the sambar out in a bowl and heat 1 tbsp of oil in the Tadka pan.
12. Add 1/2 tsp of mustard seeds, 1/4 tsp of fenugreek seeds, 1/2 pinch hing, 10-12 curry leaves, 2-red chilies, 1-pinch red chili powder to the oil, and mix well.
13. Mix Tadka to the sambar, and Instant Sambar is ready to be served.
