Cashew Nut= 50
Char Magaz= 50 gm
Ginger= 1 inch
Garlic Cloves= 12
Green Chilly= 3
Salt= 1 tsp
Water= 3 cup
For The Tadka
Oil= 4 tbsp
Green Cardamom= 6
Bay leaf= 2
Black Pepper= 1
Cloves= 2
Cumin= 1 tsp
Ginger Garlic Paste= 2 tbsp
Kashmiri Lal Mirch Powder= 2 tsp
Turmeric Powder= 1/2 tsp
Cumin Powder= 1 tsp
Garam Masala= 1 tsp
Kasuri Methi= 1 tsp
Coriander Powder= 1 tsp
Salt to Taste
Fresh Coriander= 2 tbsp
Butter= 60 gm
Ginger= 1 tbsp (julinne)
Fresh Cream= 70 gm
For The Kofta
Oil= 2 tbsp
Cumin= 1 tsp
Green Peas= 100 gm
Carrot= 150 gm
Green Beans= 150 gm
Cauliflower= 150 gm
Red Chilly Powder= 1 tbsp
Turmeric Powder= 2 pinch
Salt= 1/2 tsp
Potato= 2
Paneer= 80 gm
Corn Flour= 4 tbsp
Cumin Powder= 1/2 tsp
Garam Masala= 1/2 tsp

Koofteh Tabrizi (کوفته تبریزی) | Iranian Food | [ENG SUB]
Koofteh Tabrizi is a type of Persian meatball that originated from Tabriz, a city in Iran's East Azerbaijan Province. Koofteh Tabrizi can have additional fillings placed in the center of the meatballs, such as dried fruits, walnuts, cooked eggs, barberry (Zereshk), Bukhara plums (Aloo Bukhara), fried onions, etc., all of which are stuffed in the center of the meatballs prior to cooking. The meatballs may contain additional fillings, but that's not a requirement. The ingredients inside the meatballs (the additional fillings) depend on your taste and preference. Here, I present a very simple recipe for making Tabrizi dumplings without additional fillings. I hope you enjoy my recipe for these fluffy, juicy, aromatic, and delicious meatballs!
Ingredients (Koofteh)
1-1/2 lb. Ground Beef, 20% fat (گوشت گاو چرخ کرده)
1/3 cup Yellow Split Peas (لپه)
1/3 cup White Rice (برنج سفید), Jasmine or Basmati
1 oz Summer Savory Leaves (مرزه), fresh
1 oz Tarragon (ترخون), fresh
1 oz Dill Weed (شوید), fresh
1 oz Cilantro (گشنیز), fresh
1 oz Parsley (جعفری), fresh
1 oz Green Onions (پیازچه), stalk only
1 Egg (تخم مرغ), large or extra large
1/4 tsp Ground Saffron (زعفران) + 1 tbsp water
(Use half for Koofteh and half for the sauce)
1-1/4 tsp Salt (نمک)
3/4 tsp Black Pepper (فلفل سیاه)
Ingredients (Sauce)
3/4 White Onion (پیاز), medium size
1.5 oz Tomato paste (رب گوجه فرنگی)
1/2 tsp Turmeric (زردچوبه), ground
1/4 tsp Cinnamon (دارچین), ground
1/4 tsp Dried Lime, ground (گرد لیمو)
1/2 tsp Salt (نمک)
1/2 tsp Black Pepper (فلفل سیاه)
4 cups Hot water (آب جوشیده)
- Liquid Saffron (زعفران)
- Olive Oil (روغن زیتون), as needed
