Satay is a very popular Southeast Asian street food. Originated from Indonesia (Malaysians: please don't kill me), satay is marinated meat skewers served with peanut sauce and a side of compressed rice or ketupat. You can find satay in Indonesia, Malaysia, Singapore and Thailand with some variation between the countries. Indonesian sate is often served dipped in very rich peanut sauce - usually the peanuts would have been finely grounded - so much so that you can‘t get the bite of any peanuts anymore. In Singapore on the other hand, serves satay with coarsely grounded peanut sauce so you can still enjoy the crunch of peanuts in every bite. Satay comes in various meat. Malay stalls in Singapore usually sell mutton, beef or chicken satay whereas Chinese stalls in Singapore usually sell pork, mutton or chicken satay. While we love mutton satay, some people found the meat a little too gamey. we love it though. What about you?

Makes 27 sticks of satay
2 stalks of lemongrass - use only the white part
10 pcs of shallots
2 cloves of garlic
10g of galangal
10g of young ginger
1 teaspoon of cumin
100ml of coconut milk
100ml of water
600g of mutton
3 tablespoons of brown sugar
1 teaspoon of turmeric powder
1 teaspoon of fennel powder
1 teaspoon of coriander powder
1.5 teaspoons of salt
2 tablespoons of light soy sauce

Spicy Boti Samosa Skewers
Recipe in English:
Ingredients:
-Chicken fillets 2
-Lemon juice 2 tbs
-Hari mirch (Green chili) chopped 1 tbs
-Chaat masala ½ tsp
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Garam masala powder ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Hara dhania (Fresh coriander) chopped 2 tbs
-Maida (All-purpose flour) sifted 2 Cups
-Namak (Salt) 1 tsp
-Ghee 2 tbs
-Pani (Water) ½ Cup or as required
-Cooking oil for frying
Directions:
-Cut chicken into cubes and take out in a bowl.
-Add lemon juice,green chili,chaat masala,red chili powder,garam masala powder,turmeric powder,black pepper powder,salt,fresh coriander,mix well and marinate for 45 minutes.
-In bowl,add all-purpose flour,salt and mix.
-Add ghee and mix well until crumbled.
-Gradually add water and knead until dough is formed.
-Cover and let it rest for 15 minutes.
-Knead dough again and divide into two equal parts.
-Take a dough,sprinkle flour and roll out with the help of rolling pin.
-Cut into long strips,take one strip,place one chicken boneless cube and roll it then thread into skewers.
-In wok,heat cooking oil and fry skewers on low flame until golden brown.

-Bowl mein maida aur namak dal ker mix karein.
-Ghee dal ker crumbled hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
-Dhak ker 15 minutes kliya rakh dein.
-Dough ko dubara ghond lein aur do hisson mein divide ker lein.
-Ek dough lein aur maida chirak ker rolling pin ki madad sa bail lein.
-Long strips mein cut ker lein,ek strip lein aur chicken boneless cube ko rakh ker dough ko roll ker lein phir skewers per laga lein.
-Karhai mein cooking oil garam karein aur skewers ko halki ancch per golden brown hunay tak fry ker lein.
Chicken Satay Recipe With Peanut Sauce | Grilled Chicken Skewers
This is my super easy chicken satay recipe with peanut sauce. Satay is the quintessential South East Asian street food and it is my favourite. It can be made from any meat – chicken, pork or beef – but it is marinated with lots of spices and aromatics and grilled until it is nicely charred! The traditional accompaniment is peanut sauce as well as chunky cucumber, onions and compressed rice cake (Lontong).
Ingredients
1. 500g-1kg Chicken Thigh
2. 1-2tsp Ground Coriander
3. 1-2tsp Ground Cumin
4. 1-2tsp Ground Turmeric
5. ½-1tsp White Pepper
6. 1-2tbsp Galangal
7. 2-3 Lemon Grass paste
8. 2-4 Garlic Cloves
9. 2-4 Shallots
10. 1 Lime
11. 1-2tbsp Kecap Manis
12. 1-2tsp Honey
13. A dash of Fish Sauce
14. Salt & Vegetable Oil
I have travelled throughout Indonesia, Malaysia and Thailand and, frankly, the best satay you will ever eat will be from the rural, countryside areas. It is very difficult to exactly recreate the yummy taste of satay in the west because, I guess, it is difficult to replicate the freshness of ingredients, cooking methods and just the overall heat and climate.
But we can get quite close! There are plenty of reasons why you should want to make satay apart from the fact it is delicious. It is a fantastic appetiser and it is great for parties and barbecues. Satay should be nicely charred but still succulent but, if you over-grill the meat, the peanut sauce will make your satay skewers taste delicious regardless.
As I say, my recipe is super easy and better still, I got all the ingredients from my local supermarket including lemongrass paste and galangal.

1.1 lb (500g) Denver steak, cut into strips (cut against the grain) - cut into long, thin strips, about 1/4 inch thick (you can replace with skirt or flank if preferred)
2 tbsp vegetable oil
2 tbsp dark brown sugar
1 tbsp fish sauce
Basting Sauce:
7 oz (200ml) coconut milk - from a tin
3 tbsp dark brown sugar
1 tbsp fish sauce
2 tbsp vegetable oil
2 garlic cloves - peeled and crushed
2 tsp lemongrass paste - (or 2 lemongrass stalks, outer leaves discarded, inner leaves minced)
2 tsp minced ginger
1 tbsp dark soy sauce - use tamari for gluten-free
½ tsp cumin
1 tsp ground coriander
Satay sauce:
3 heaped tbsp chunky peanut butter
1 tbsp dark soy sauce - use tamari for gluten-free
1/2 tsp chilli flakes - (red pepper flakes)
1 tbsp fish sauce
7 oz (200ml) coconut milk - from a tin
1 tbsp dark brown sugar
1/2 tsp ground coriander
Juice of 1 lime
To Serve:
1 fresh red chilli - thinly sliced
2 tbsp Fresh coriander (cilantro) - chopped
1/2 tsp chilli flakes - (red pepper flakes)
1/4 red onion - peeled and finely sliced
1 tbsp roasted peanuts - roughly chopped
1 tsp sesame seeds

Thai Chicken Satay Skewers with Peanut Sauce Recipe - BBQ & Air Fryer Cooked Thai Street Food
Thai chicken satay skewers with peanut sauce are the ultimate Thai Street Food. Cook at home in your air fryer. Find the easy print recipe at
BBQ's are great for social gatherings but not really feasible for a quick evening dinner or whipping up some quick tasty snacks to eat which is where the Air Fryer really shines.
I have always cooked Thai satay skewers on the BBQ but have been stunned by how flexible my air fryer is and the amazingly tasty and moist results I have been getting. So throwing caution to the wind, I thought I'd experiment with a few chicken skewers in the Air Cooker.
I was blown away at how fantastic they tasted. They did not have the smokey flavor of a traditional chargcoal BBQ but they tasted pretty near to the BBQ chicken sticks I cooked from the same batch. In some ways they were even better.
So if you fancy Thai Chicken Skewers when the weather is cold or to save a heap of time and organisation - use the air fryer.
If you haven't got one yet - you don't know what you are missing!
As for the peanut sauce, the first I made the old fashioned way - crushing peanuts and so on. Well let me tell you peanut butter is so much easier and much less hassle not to mention quicker.
And don't forget the Sweet Thai pickles. These are made with a sweet vinegar and really help freshen your palate in between skewers.
