Barbecue Lamb Skewers Recipe

Today we are making Xin Jiang Style Lamb BBQ skewers. Just saying the name makes my mouth water. It is the number one popular street food when you visit Xin Jiang. So, let’s get started.

INGREDIENTS
2 lbs of lamb leg meat (at least 15% fat)
2 cups of onion slices
4-5 cloves of crushed garlic
1.5 tbsp of cumin seeds [Amazon Link:
2 tsp of Sichuan peppercorn [Amazon Link:
1 tsp of white pepper [Amazon Link:
1 tsp of fennel [Amazon Link:
2.5 tbsp mild chili flake (optional)
1 tsp of spicy chili flake (optional)
2 to 3 tsp of salt or taste
Afghan Lamb Kebab ( shish kebab , Tikka Kebab , Sikh Kebab )
Afghan kabab should preferably be grilled on charcoal, so you get the lovely charcoal flavor into the meat. It was raining when I was going to bbq so I had to grill it on the gas grill as you can see in the video.
Ingredients:
5 Crushed garlic cloves
3 tbsp Yogurt
2,5 tsp Salt
1 tsp Ginger powder
1 tsp Coriander powder
1 tsp Cumin powder
1 tsp Chili flakes
1/2 tsp Cinnamon powder
2,2 lbs (1kg) Leg of lamb
3 tbsp Olive oil
Juice of one lemon
One onion cut in four pieces
One lemon cut in half
Chopped parsley for garnish
Marinade time: 4 - 48 Hours
Cooking time: 20 min

1 tbsp Red Chilli Powder
1 tbsp Garam Masala Powder
1 Capsicum
1 Tomato
1 Onion
For Frying

80ml onion juice (roughly 1 large onion strained)
100ml whole milk
3 Tbsp olive oil
2 Cloves of Garlic
30g Red Pepper Paste - or tomato paste
1 Tsp salt (If you are doubling or tripling the recipe, make sure you do not exceed exactly 1 tsp per 500g, everything else can be rough except the salt)
1/2 Tsp Pul Biber or Aleppo Pepper
1 Tsp oregano
1/2 Tsp black pepper
