How To make Moroccan Beef Kefta On Skewers with Chopped Vegetable Salad
1 1/2 pound ground beef
1/2 cup grated onion
2 cloves garlic
finely minced
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh coriander
3 teaspoons finely chopped fresh mint or 1 teaspoon
:
dried mint 2 teaspoons finely chopped fresh marjoram or 1/2
teaspoon dried marjoram salt and freshly ground black pepper 1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
chopped vegetable salad: 1 seedless cucumber :
peeled and finely
diced 1 large tomato :
seeded and finely
diced 1 green bell pepper :
seeded and finely
-- diced 1 hot italian-style pepper seeded and finely
:
diced 2 cloves garlic finely minced
3 tablespoons finely chopped fresh mint
2 tablespoons red wine vinegar
2 tablespoons olive oil :
(up to 3)
In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, marjoram, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour. Soak 12 wooden skewers in water for one hour.
In a separate bowl combine cucumber, tomato, bell pepper, hot pepper, garlic, mint, red wine vinegar, olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.
Preheat grill or broiler.
Dip hands into a bowl of water. Shape and pack about a 1/3 cup of the meat mixture into 2 sausage-shapes on a soaked wooden skewer. Repeat procedure for remaining meat and skewers.
Grill the keftas on both sides until cooked through, about 3 to 4 minutes per side. Serve hot with chopped salad.

(70% meat 30% fat) (charbi wala keema)
- Red bell pepper ( lal shimla mirch) 1 medium
- Garlic 5-6 cloves (lehsan)
- Onion (pyaaz) 1 large
- Parsley or Coriander 1/2 bunch OR 1/2 cup
(dahnia)
- Salt (namak) 3/4 tbsp or to taste
- Black pepper (kali mirch) 1 tsp
- Sumac 1 tbsp ( substitute: Pomegranate powder (anardana powder 1 tbsp or lemon juice 2 tbsp with 1/8 tsp lemon zest )
- Coriander powder (dahnia) 1/2 tbsp
- Cumin powder (zeera) 1 tsp
- Red chilli (lal mirch) 2 tsp
- paprika powder 1 tsp
- Oil for frying 2-3 tbsp
For Salad:
- Onion (pyaaz) 1 large
- Tomato 1 large
- Parsley or Coriander 2-4 tbsp
- Lemon juice 2 tbsp
- Sumac 1/2 tsp OR Black pepper (kali mirch) 1/4 tsp

Eid-Al-Adha is coming up next week and Moroccans are going to be preparing delicious lamb dishes. We are going to prepare ground lamb meat skewers. In Morocco, ground meat is very popular (especially during Eid) and it is either cooked in a sauce or grilled. We are going to grill it, but we are going to add two ingredients that are going to make the flavors pop: chopped mint leaves and freshly grated nutmeg!

Kafta Lebanese style recipe made with lamb or beef kebab
Here is my go-to kafta recipe that is quick, easy and very tasty. This is the recipe that my family makes and you can use this recipe to make hamburger patties, skewers and two main Lebanese dishes. Make sure to use a good quality ground or minced meat if you are making this by hand. Or diced lamb or beef meat if you want to make it easily using a food processor which I'll show you.
The kafta is delicious on it's own, but you can also have it with hummus or even tomato sauce. You also shape them in sausage shapes barbeque them, so delicious!

Kefta (Moroccan Ground Beef Kabobs)
Kefta ground beef kabobs are a classic Moroccan dish combining lean beef and fresh herbs. Grilled up and served with creamy tahini yogurt sauce, this kefta recipe makes a quick, flavorful meal.

Ingredients
3/4 lb ground lamb
3/4 lb ground beef
1 tsp red pepper flakes
1/2 tsp kosher salt
1 tsp ground fennel seed
1 tsp ground cumin
1/2 cup breadcrumbs
1 medium onion quartered
4 garlic cloves
1 cup fresh flat-leaf parsley leaves
1 cup fresh cilantro leaves plus more for serving
1/2 cup fresh mint leaves
Tahini Yogurt Sauce
½ cup plain Greek yogurt
1 lemon (½ grated lemon zest plus 2 tablespoons juice)
2 tbsp mint leaves minced
1 tbsp tahini
1 tbsp water
¼ tsp salt
¼ tsp black pepper
Serving Options

Tabouli Salad
Rice
Warm Pita
1 lemon, cut into wedges for serving
Instructions
Place the ground lamb, beef, red pepper flakes, salt, ground fennel, cumin and breadcrumbs in a mixing bowl. Set aside.
In a food processor place the onion, garlic, parsley, cilantro, mint and process until very finely chopped, scraping down sides of bowl.
Place in a fine mesh sieve and allow to drain excess liquid. Press with fingers or with back of spoon to extract.
Transfer mixture to bowl with the ground meats and mix by hands until evenly combined. Chill mixture at least 1 hour.
Make the Tahini Yogurt Sauce: Zest half of the lemon and then juice it. You need 2 tablespoons of lemon juice.
In a bowl whisk together the yogurt, lemon zest and juice, mint, tahini, water, salt and pepper. Set aside.
Prepare grill at 450°F. Clean and lightly oil grill grates.
Assembly
Divide meat mixture into 8 portions and form each portion into a 5”-long sausage shape. Insert a metal skewer lengthwise through each portion.
Drizzle with olive oil and grill, turning occasionally, until just cooked through, 8–10 minutes total.
Drizzle tahini yogurt sauce over kefta. Serve over couscous, tabouli salad or rice with warm pita bread and lemon wedges.
