ABOUT THIS RECIPE:
The term “Kefta” in Moroccan Arabic refers to ground beef or lamb that is flavored with warm spices, onions, and fresh herbs, then shaped into skewers or small patties before being cooked on the stovetop or grilled on charcoal.
The resulting dish is a popular protein that can be served for family meals alongside fresh salads or used to make sandwiches that are ideal for a lunchbox. Many Moroccan families also enjoy grilling kefta at home or outdoors during picnics.
The key to having a moist and tender kefta is in the cooking time. Though Moroccans prefer to eat their proteins well cooked, you can adjust the cooking time to your preference. Stick to medium cook for an extra juicy kefta. Serve with your favorite salads and enjoy!
Ingredients
1 small white onion
1 small garlic clove
Small bunch of parsley with a few ciltran branches
500g (1 lb) ground beef
1/2 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder (or to taste)
1 teaspoon ground black pepper
1 teaspoon ground ginger
1/4 teaspoon salt
2 tablespoons vegetable oil
Steps
Step 1: Preparing the ground beef
1- Peel the onion and roughly chop it.
2- Peel the garlic.
3- Roughly chop the parsley and cilantro.
4- Place the onion, garlic, and herbs in a food processor, then blend until all the ingredients together.
5- Place the onion and herb mixture in a bowl.
6- Add the ground beef, then season with.
7- Season with cumin, paprika, chili powder, pepper, ginger, and salt.
8- Mix to combine, then shape the kefta into patties or fingers.
Step 2: Cooking the Kefta
1- Heat up the oil in a pan or grill pan over medium heat.
2- Add the keftas, then cook on both sides while occasionally flipping until the kefta is cooked through (about 5 minutes).
3- Serve the keftas, then enjoy!

Kefta ground beef kabobs are a classic Moroccan dish combining lean beef and fresh herbs. Grilled up and served with creamy tahini yogurt sauce, this kefta recipe makes a quick, flavorful meal.

Ingredients
3/4 lb ground lamb
3/4 lb ground beef
1 tsp red pepper flakes
1/2 tsp kosher salt
1 tsp ground fennel seed
1 tsp ground cumin
1/2 cup breadcrumbs
1 medium onion quartered
4 garlic cloves
1 cup fresh flat-leaf parsley leaves
1 cup fresh cilantro leaves plus more for serving
1/2 cup fresh mint leaves
Tahini Yogurt Sauce
½ cup plain Greek yogurt
1 lemon (½ grated lemon zest plus 2 tablespoons juice)
2 tbsp mint leaves minced
1 tbsp tahini
1 tbsp water
¼ tsp salt
¼ tsp black pepper
Serving Options
Couscous Salad
Tabouli Salad
Rice
Warm Pita
1 lemon, cut into wedges for serving
Instructions
Place the ground lamb, beef, red pepper flakes, salt, ground fennel, cumin and breadcrumbs in a mixing bowl. Set aside.
In a food processor place the onion, garlic, parsley, cilantro, mint and process until very finely chopped, scraping down sides of bowl.
Place in a fine mesh sieve and allow to drain excess liquid. Press with fingers or with back of spoon to extract.
Transfer mixture to bowl with the ground meats and mix by hands until evenly combined. Chill mixture at least 1 hour.
Make the Tahini Yogurt Sauce: Zest half of the lemon and then juice it. You need 2 tablespoons of lemon juice.
In a bowl whisk together the yogurt, lemon zest and juice, mint, tahini, water, salt and pepper. Set aside.
Prepare grill at 450°F. Clean and lightly oil grill grates.
Assembly
Divide meat mixture into 8 portions and form each portion into a 5”-long sausage shape. Insert a metal skewer lengthwise through each portion.
Drizzle with olive oil and grill, turning occasionally, until just cooked through, 8–10 minutes total.
Drizzle tahini yogurt sauce over kefta. Serve over couscous, tabouli salad or rice with warm pita bread and lemon wedges.

Baalbek, Lebanon - Welcome to Baalbek, Lebanon, one of the world’s most ancient cities. I was excited to visit, and before we toured the ancient ruins of Baalbek, we went on a street food tour. The first place Kamel and Fadi took me was a small butcher shop that specialized in not only raw fresh meat, but kebabs and kofta kebabs, and preparing meat to go into a special pastry from Baalbek. After eating the amazing pastries - which unfortunately didn’t make today - we then had some of the best freshly grilled kofta kebabs I’ve ever had. And so in this video we’ll learn to make Lebanese street food kofta kebabs!
First let me mention to you this was my first time to ever make this kofta kebab recipe, and more importantly my first time to form kebabs on skewers. Let me tell you, they make it look much easier than it is. To form minced meat onto a metal sword like skewer can take a lifetime of practice and it’s challenging to get the perfect consistency, evenness, and form. But luckily it turned out pretty well.
Ok, here are all the ingredients you’ll need to make this Lebanese street food kofta recipe. And this list of ingredients is just a guide, not exact. You can increase or decrease depending on your taste and feel.
For the kofta kebabs:
1 White onion
100 g. Flat leaf parsley
1 kg. Ground lamb (or beef)
½ teaspoon Lebanese Seven Spice mixture
1 teaspoon Black pepper
Salt - to taste
Dry chili (I used cayenne) - to taste
For the parsley salad:
100 g. Flat leaf parsley
1 White onion
2 Tomatoes
1 teaspoon Sumac
½ Lemon juice
Salt - to taste
Extras:
Tomatoes and onions to roast, pita bread to eat with entire meal
