How To make Rum Raisin Fudge
1 c Raisins
1/2 c Dark rum
2 1/2 c Granulated sugar
1/2 c Butter
1 c Evaporated milk
1 7 oz jar marshmallow creme
2 c Semi-sweet chocolate chips
1/2 c Chopped pecans
1 t Rum extract
In a small bowl, combine raisins and rum. Marinate overnight. In a large, heavy saucepan, combine sugar, butter, and milk. Cook over medium heat, stirring constantly until mixture reaches soft ball stage (238 degress on a candy thermometer, about 5 minutes). Remove from heat. Stir in marshmallow creme, chocolate chips, pecans, extract, and raisin mixture. Spread mixture into a lightly greased 10x8x2-inch baking pan. Cool and cut into squares. Rum & Raisin Fudge Recipe by Chef Shaun ???????? Foodie Nation
Yield - 8 to 12 Servings
Ingredients:
Dark Rum - 1/2 cup
White sugar - 1 cup
Condensed milk - 1 cup
Vanilla essence - 1 tsp
Raisins - 1/3 cup (finely chopped)
Unsalted butter - 2 tbsp
Sea Salt - Pinch
Method:
1. Grease 9” X 9” X 1” dish and set aside.
2. In a small saucepan, add rum, sugar, and condensed milk.
3. Using a spatula, stir over low heat.
4. After 25 minutes, add remaining ingredients.
5. Continue to stir mixture over low heat (about 10 minutes).
6. Immediately transfer to greased dish and garnish with sea salt & more raisins if you wish.
7. Allow to cool for 5 minutes before marking.
8. Once fully cooled, cut fudge and enjoy.
