???????? INGREDIENTS:
• 500g medium starch potatoes
• Salt and white pepper to taste
• grapeseed oil for frying
• extra butter for frying
• 2 x 340g tin of corned beef
• 30g butter, unsalted
• 90g horseradish
• 30g HP sauce
• 30g ketchup
• 6 Swiss cheese slices
• 200g sauerkraut, squeezed dry
• bread and butter pickles, to serve
???????? METHOD:
Peel the potatoes and grate on the coarse side of a box grater. Season to taste with salt and white pepper, then let stand for five minutes. With your hands, squeeze as much moisture as possible from the potatoes and discard.
In a frying pan, fry the corned beef in butter until rendered. Drain off the fat, add in the horseradish and HP sauce, mixing well. Set aside.
In a curved edged 18-20cm non-stick or tempered steel pan, melt a small knob of butter with a dash of oil and press half of the grated potatoes in an even layer around the base and sides.
Next, layer half the sauerkraut in first, then half the corned beef, followed by the Swiss cheese, add more grated potato around the edges of the pan then the other half of corned beef followed by the other half of sauerkraut and finally add the second half off potatoes, pressing down into the sides of the pan to seal the filling on the inside. Fry for about 15 mins on a medium to low heat until you can see the edges beginning to turn golden brown. Flip onto a plate and return to the pan with a little oil to cook the other side for a further 15-20 minutes until golden brown.
Serve simply with a jar of bread and butter pickles!

Classic Southern Reuben Sandwich Casserole

Ingredients
Coat
1 Tbsp butter
Cover
1 ¼ lb sliced pumpernickel bread or rye bread
3 C diced corned beef (about 1 lb)
3 C sauerkraut well drained
4 C shredded swiss cheese (about 1lb)
1 ½ C dressing (¾ C Russian Dressing, ¾ C Duke's Mayonnaise, salt & black pepper)
Blend
10 eggs
2 ½ C whole milk
2 Tbsp Dijon Mustard
Directions
Butter a 12-by-15-inch baking pan's bottom and sides. A layer of bread pieces should be placed on the dish's bottom. Add a cup of corned meat, cheese, and sauerkraut on top. Sprinkle salt and pepper on top after drizzling 1/2 cup dressing over it. Layering should be done twice more. Dijon Mustard, milk, and eggs should all be blended. Pour over the baking dish's layers. Over the top, add the final cup of cheese. Wrap in plastic and apply pressure. 1 to 24 hours should be spent cooling. For around 45 minutes (160°F), remove the cover and heat the oven to 350°F. 10 minutes should pass before serving.

Easy and Delicious Rueben Bake
This may not be a true Rueben, but it still tastes fantastic and it's easy to make. This can be served for breakfast, brunch, and is wonderful with soup.
Rueben Bake
Ingredients
1 tube of crescent rolls
8 to 10 slices of swiss cheese
8 oz. of sliced corned beef
1/2 cup Thousand Island salad dressing
1 (14 oz.) can sauerkraut, drained
1 egg
poppy seeds or caraway seeds sprinkled on top
Instructions
Preheat oven to 375 degrees. Unroll tube of crescent rolls and place half in a 7x11 baking dish that has been lightly greased. Seal perforations. Bake for approximately 8 minutes until golden brown. After bottom dough has baked, remove from oven. Layer half of the cheese on top of the baked crescent rolls. Next layer all of the corned beef. Combine the drained sauerkraut with Thousand Island dressing. Spread the sauerkraut mixture over corned beef. Place remaining cheese over the top of the sauerkraut. Place the other half of the crescent roll dough on top of the last cheese layer. Carefully seal the perforations. Brush with egg and sprinkle with either poppy or caraway seeds. Bake for 15 to 20 minutes until the crust is golden brown. Allow to cool for 5 minutes before cutting.
