Farmer's casserole may be the world’s easiest casserole! Bake it right away or just layer the ingredients in a baking dish the night before, stick it in the fridge, then pop it in the oven in the morning. Farmer’s Casserole is perfect for the busy holiday season. Mix it up before you go to bed, and you can enjoy coffee with your company while it bakes. Serve with fruit, biscuits, or pancakes.
The variations are virtually endless. It's easy, affordable, and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.

My family loves this breakfast casserole! It's easy to make and can be prepared ahead of time. I hope your family enjoys it as much as mine!

Breakfast/Brunch Casserole
4 C. (32 oz) Tater Tots (frozen)
1 C. Grated Colby Jack Cheese (reserve half to melt on top of the casserole)
1 C. Grated Sharp Cheddar Cheese (reserve half to melt on top of the casserole)
2 C. (16 oz) Cut up Cooked Ham or Cooked Breakfast Sausage
1 C. Milk (Whole or 2%)
1/2 C. Sour Cream
8 Large Eggs
1/2 t. Garlic Powder
1/2 t. Onion Powder
1/2 t. Salt
1/4 t. Black Pepper
Optional:
Green Bell Pepper (cut up and sautéed)
1/2 C. Onion (sautéed till soft)
Bake Uncovered @350 degrees 40-50 minutes or until set and sides and top are golden brown. Add remaining 1 C. of cheese on top of casserole. Return to turned off oven and let cheese melt (about 5 minutes).

Ham Egg and Cheese Breakfast Casserole
To an oven safe dish add:
8 eggs whisked
1LB of hash browns
1 diced red pepper
1/2 of a diced onion
Cubed ham
Bacon pieces
Top with cheese
Bake at 350 until the eggs are done to your liking (30 minutes +)

INGREDIENTS
For the vegetables:
- 1 medium onion, chopped
- 2 cups chopped broccoli
- 8 oz mushrooms, chopped (stems removed if using shitake)
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
For the casserole:
- 10 large eggs
- 1 cup whole milk
- 1 cup heavy cream
- 2 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 4 large croissants, roughly cubed
- 4 oz Swiss cheese, shredded
- 1 1/2 cups diced ham
INSTRUCTIONS
For the vegetables:
- Preheat the oven to 400°F.
- On a large parchment-lined baking sheet, combine the chopped broccoli, mushrooms, and onion. Drizzle with olive oil, salt, and black pepper, and mix to evenly coat the vegetables in the oil. Spread to an even layer and roast in the preheated oven until the vegetables begin to brown and the broccoli is tender, 20-25 minutes. Once the vegetables are roasted, remove them from the oven to cool.
For the casserole
- Grease a 9x13 baking dish and set it aside. Once the vegetables are done roasting, reduce the oven temperature to 350°F.
- In a large bowl, whisk the eggs until they are evenly combined. Add the milk, heavy cream, Dijon mustard, salt, and black pepper. Whisk to combine.
- Fold in the cubed croissants and add 3/4 of the Swiss cheese. Mix everything together and let soak while the vegetables finish roasting.
- Once the vegetables are finished roasting and have cooled slightly, add the ham and cooled roasted vegetables. Fold gently and pour the mixture into the prepared baking dish. Sprinkle with the remaining Swiss cheese and place in the 350°F oven. Bake until the eggs are set with a slight jiggle in the center, 45-55 minutes. Once baked, remove the casserole from the oven and cool for 10 minutes before serving.
