???????? Carbonnade à la Flamande | Traditional Belgium BEEF STEW - FLEMISH. Recipe by Always Yummy!
Traditional Belgium stew – beef braised over low heat in a beer, tenderest meat pieces seasoned with spices, in a mouth-watering sauce, that’s very tasty, even if you don’t like beer. And culinary adepts say the longer a ragout is braised, the tastier it is, and if there is no flavored bread at home, use a rye bread spread with mustard.

✅ Ingredients:
• boneless beef – 3 lb | 1400 g
• dark beer or red ale – 4 cup | 1 l
• bacon – 3 oz | 80 g
• bulb onion – 9 oz | 250 g
• flavored brown bread – 2 oz | 50 g
• 2 bay leaves
• fresh thyme – 4 sprigs
• brown sugar – 1 tbsp
• dijon mustard – 3 tbsp
• ground black pepper – ½ tsp
• fresh parsley – 2 tbsp | 10 g
• ground cloves - ⅓ tsp
• ground cinnamon – ½ tsp
• vegetable oil – 2 tbsp
• salt – to taste
✅ You will need:
• carving board
• pan
• saucepan or stockpot
• bowl
???? Preparation:
1. Cut the beef and bread into average pieces, chop up the bulb onion.
2. Heat a pan with the vegetable oil and fry the meat on all sides, in small portions, over high heat until golden brown for 3-4 minutes and take out into a bowl.
3. In the same pan fry the bulb onion until caramel over high heat for 2-3 minutes.
4. Add the sliced bacon and fry for another 2 minutes.
5. Lay out the fried bulb onion and bacon into a saucepan, add the sugar and stir, add the mustard, salt, pepper, cloves, cinnamon, thyme, bay leaves, fried meat and beer, stir and bring to a boil.
6. Add the cut flavored bread into the saucepan and stir.
7. Cook with no lid over medium heat for 10 minutes to have alcoholic fumes evaporated.
8. Cover the saucepan with a lid and braise for 3 hours over lowest heat stirring occasionally.
9. Serve your Flemish ragout hot. Sprinkle with the chopped up parsley greens when serving.
A Lazy Beef Burgundy Dinner for Friends (Beef Bourguignon)
Beef Burgundy
2 pounds pounds beef (cut into big chunks)
1 large onion (medium diced)
2 stalks celery (medium diced)
2 small or 1 large carrot (medium diced)
2 tbsp tomato paste
2 cups red wine (burgundy or any red cooking wine)
6 pearl onions (peeled whole)
4 cremini mushrooms (quartered)
1 box beef stock (32oz)
3 rosemary sprigs
6 parsley stems
butter/flour mixture
1 to 1 flour to butter ratio (about 3 tbsp)
1. In a large dutch oven or strong pot that holds heat, drizzle with neutral oil and sear your beef chunks, only cooking the outer layer of the beef, then set aside
2. Into the same pot add your carrots, onions and celery. Cook on medium heat for 2-3 minutes until slightly translucent
3. Add in the tomato paste and cook for another 2-3 minutes stirring in the paste until it cooks through
4. Add in the wine and reduce on high heat until there is barely any liquid left, stirring once in a while so the bottom doesn’t burn
5. Once reduced, add in the beef stock and bring to a boil
6. Once boiled, close the lid and cook for 35 minutes on medium-high heat
7. After 35 minutes, add in the mushrooms and pearl onions and herbs and close the pot and cook for another 35 minutes
8. Check the beef to see if it’s tender. If it is tender, it is finished. Open the lid and let the liquid reduce for another 10-15 minutes
9. Turn off the heat and add in the butter/flour mixture
10. Season to taste and serve over a bed of potato puree and garnish with parsley
Potato Puree
5 Idaho potatoes (cut into thirds)
4-5fl oz heavy cream
5 tbsp butter
salt to taste
1. In a large pot, add cold water and add your potatoes
2. Add salt to the water and bring the water to a boil, and boil your potatoes until super tender
3. Once the potatoes are super tender, drain the water and bring the potatoes back into the pot. Put the potatoes through a ricer. If you don’t have a ricer, add in the butter and the heavy cream first, then use a masher, or hand blender to make it into a puree consistency
4. Add salt to taste and serve

Ingredientes:
- 170g de bacon em fatias finas
- 1,5kg de carne bovina em cubos
- 2 copos de cenoura em rodelas grossas
- 1 copo de cebola em cubos
- 6 dentes de alho picados
- 2 colheres de sopa e farinha de trigo
- 3 copos de vinho tinto
- 2 copos de caldo de carnes
- 2 colheres de sopa de extrato de tomate
- Tomilho picado
- Salsa picada
- 2 folhas de louro
- 500g de cogumelo do tipo champignon picado em 4
- 2 colheres de sopa de manteiga
- Purê de batatas
Modo de Preparo:
1) Preaqueça a Panela de Pressão Royal Prestige® em temperatura média.
2) Adicione o bacon e deixe cozinhar até que fique crocante.
3) Acrescente os cubos de carne e a farinha; mexa bem.
4) Adicione o extrato de tomate, as cebolas, o alho e cenoura; mexa.
5) Coloque o vinho, o caldo de carne e as ervas.
6) Tampe a panela e deixe cozinhar em fogo médio, até que a panela comece a soltar vapor.
7) Reduza o fogo ao mínimo e deixe cozinhar por 30 minutos.
8) Depois de 30 minutos, apague o fogo e mude a válvula para a posição de liberar pressão.
9) Espere até que o indicador de pressão abaixe.
10) Abra a panela, adicione os cogumelos e mexa bem.
11) Deixe repousar, e se desejar uma textura mais espessa, cozinhe destampado por mais 5 minutos.
12) Decore com a salsa picada e sirva com o puré de batatas.

French recipe : how to make Boeuf bourguignon
Boeuf bourguignon is a classic french recipe. It's a kind of beef stew. The best thing to make when you are snowed in (like I was, lol) or a lil sick. Comfy food I tell you.
I always eyeball my stuff while cooking I actually had to think about it to come up with the exact amount of ingredients. lol.
You can have it with rice, pasta, potatoes ( boiled or mashed).

Recette : Boeuf Bourguignon de Thierry Marx - Les Carnets de Julie - Le Boeuf Bourguignon !
LA RECETTE CI-DESSOUS ????
Ingrédients pour 8 personnes :
1 kg de paleron
100 g de lard de Colonnata
1 carotte orange
1 oignon blanc
1 échalote
1 branche de céleri branche
½ vert de poireau
2 l de vin tannique type Crozet Hermitage
3 l Badoit
1 l jus de bœuf
3 branches de thym,
1 feuille de laurier
Pour l’accompagnement :
4 jeunes carottes jaunes
4 jeunes carottes oranges
4 jeunes carottes violettes
4 oignons nouveaux
250 g champignons de Paris bouton
20 cl vin blanc sec
½ botte fane carottes
¼ botte de ciboulette
Dégraissez légèrement le paleron et coupez-le en morceaux réguliers de 80 g environ. Faites-les mariner pendant 20 minutes dans de l’eau gazeuse pour attendrir les chaires.
Pendant ce temps la, coupez le lard de Colonnata en petits bâtonnets. Réservez-les 5 à 10 minutes au congélateur afin qu’ils soient suffisamment fermes.
Egouttez la viande. Insérez un bâtonnet de lard à l’extrémité de l’aiguille. Piquez votre viande et faites ressortir l’aiguille de l’autre côté, de manière à laisser le gras dans les chairs de la viande. Recommencez avec tous les bâtonnets. Réservez
Taillez carotte, oignon, échalote, poireau et cèleri en grosse mirepoix. Confectionnez un bouquet garni avec le vert du poireau, le thym, et le laurier.
Egouttez et séchez la viande. Marquez-la dans une cocotte, ajoutez les légumes, le vin rouge puis le jus de bœuf. Faites cuire pendant 2h à 200°C au four en convection à couvert.
Pendant ce temps là, préparez les légumes. Coupez les oignons en deux et placez-les à plat dans une casserole. Ajoutez un peu de beurre clarifié et de l’eau gazeuse. Faites dorer à feu doux.
Faites blanchir les carottes et grattez les à l’aide un couteau. Placez-les entières dans une casserole et faites les cuire doucement comme pour les oignons
Lavez les champignons boutons, faites-les sauter dans une poêle à feu vif à l’huile, déglacez au vin blanc, laissez réduire à sec puis terminez la cuisson avec le jus de cuisson en cours.
Egouttez la viande puis réservez-la au chaud. Faites réduire le jus de cuisson jusqu’à ce qu’il soit d’une consistance onctueuse.
Réalisez un petit bouquet avec les fanes de carotte et la ciboulette. Huilez avant le dressage.
Si besoin, montez la sauce au beurre. Rectifier l’assaisonnement.
Dressez et servez bien chaud !
