Peachy Bourbon BBQ Baked Beans ~ Baked Beans ~ Peach Season
Try a new twist on an old favorite! Sweet juicy peaches and smoky Bourbon put these baked beans over the top. Bake in the oven or on the grill. All kinds of options for mix-ins.
1 qt. or 4 c. prepared baked beans
4 strips of thick cut bacon (I used peppered bacon), cut into small pieces
1/2-1 c. chopped fresh onion
1/2 c. prepared peach BBQ sauce or peach preserves
1/2 c. prepared BBQ sauce (1 c. if using peach preserves)
1/2 c. good Bourbon (I used Maker's Mark)
1 large fresh peach, chopped or chopped canned peaches
Seasonings to taste
Mix-in ideas: browned ground beef, chopped hot dogs or smoked sausage, BBQ pulled pork
In a cast iron skillet crisp up bacon, add onion and saute until it starts to soften. Add Bourbon, cook and allow alcohol to cook off for about 30 seconds. Add prepared baked beans, peach BBQ sauce, BBQ sauce and chopped peaches.
Bake covered in 375* pre-heated oven for 45 minutes. Remove lid and bake another 10-15 minutes.

Root Beer Baked Beans

Yield: 4 to 6 servings
Ingredients
4 slices bacon, cut into 1-inch pieces
1 large white onion, finely diced
2 garlic cloves, minced
1 tablespoon minced fresh ginger
2 tablespoons tomato paste
Two 12-ounce bottles root beer
1 teaspoon apple cider vinegar
2 teaspoons molasses
1 tablespoon grainy mustard
Hefty pinch red pepper flakes
1/4 teaspoon garam masala, store bought or homemade, recipe follows
Four 14-ounce cans cannellini beans (white kidney beans), rinsed and drained
Kosher salt and freshly ground pepper
Aarti's Hot (not heavy!) Homemade Garam Masala:
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional
Directions
Preheat the oven to 400 degrees F.
Set a medium oven-safe pot over moderate heat and add bacon. Cook until most of the fat is rendered out and the bacon is crisp. Prepare a plate with paper towels, and using a slotted spoon, remove the bacon from the pot to the plate. Set about a quarter of the bacon aside, for garnish.
Add the onions, garlic and ginger to the pot, and saute until soft and golden. Add the tomato paste and cook until the tomato paste deepens in color, about another minute.
Next add the root beer, cider vinegar, molasses, grainy mustard, red pepper flakes and garam masala. Stir to combine. Then add the beans and bacon, and gently stir so the beans don't lose their shape. Taste for salt and pepper, then pop into the oven, uncovered, until the mixture thickens, about 30 minutes. Remove the beans from the oven, let it cool slightly, and sprinkle with reserved bacon and serve.
Aarti's Hot (not heavy!) Homemade Garam Masala:
Yield: About 1/2 cup.
Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using into a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

INGREDIENTS
1 lb dry pinto beans
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1 lb bacon, cut into pieces
1/3 cup flour
2 cups water
3 cups root beer soda
1 lb pinto beans
salt & pepper, to taste
1 tsp cumin
1 tsp chili powder
2 tbsp brown sugar
2 tbsp worcestershire
2 tbsp mustard
2 tbsp molasses
1/3 cup bbq sauce of choice
1/3 cup ketchup
DIRECTIONS
Set pressure cooker to sear, toss in onions, peppers and bacon. Cook until bacon is done and vegetables are translucent and soft. Mix in flour. Add rest of ingredients and mix well. Cook on high pressure for 30 minutes. Let naturally release for 15-30 minutes.
