How To make Rice Cups with Guacamole and Salsa
3 c Hot cooked rice
2 oz Cheddar cheese, shredded
1/4 c Shredded Parmesan cheese
1 ts Ground cumin
1/4 ts Ground red pepper
1 ts Salt; divided
Vegetable cooking spray 2 Ripe avocados
2 tb Lime juice
1/4 c Finely minced cilantro
1/4 c Finely minced onion
1/4 c Prepared salsa
1/4 c Dairy sour cream
Cilantro leaves Combine rice, cheese, cumin, ground red pepper, and 1/2 teaspoon salt. Press firmly and evenly into mini-muffin tins coated with cooking spray and bake at 350 degrees 15 minutes. Remove from pans and cool to room temperature. Mash avocados with fork in medium bowl. Sprinkle with lime juice. Add cilantro, onion, salsa, sour cream, and remaining salt; blend well. Ingredients:
Half of an Avacado
Spices: cayenne pepper, paprika, cumin, garlic salt, onion salt, red pepper flakes
lime juice
left over rice
chick peas, drained and rinsed
salsa
I grated some cheddar cheese onto this and it was delicious! Also, I had the same lunch yesterday, but used left over chicken instead of chick peas.
In case you were wondering, I have clean hands throughout this video, and I did wash them after I leave to blow my nose! That's why it takes me so long! Geeze, I need to learn how to edit things like that. Sorry guys!

2.5 Pounds Chuck Roast
1 7 oz can of Chipotle Peppers in Adobo Sauce (5 peppers from the can)
1 TSBP Dried Oregano
2 Tsp Cumin
2 Tsp Kosher Salt
1 Tsp Ground Black Pepper
1/2 Tsp Ground Cloves
2 Bay Leaves
1/4 Cup and 1 TBSP of Rice Bran Oil
1/4 Cup of Water
5 Garlic Cloves

Guacamole Ingredients
2 ripe avocados
1 ripe tomato, chopped (1/2 cup)
1 small onion, chopped (1/4 cup)
1/4 cup cilantro
2 tsp lemon juice
Salt to taste
1/2 tsp black pepper powder
Method:
1) Cut the avocados in half.
2) Discard the seed.
3) In a mixing bowl, scoop out the pulp with a spoon.
4) Mash with a fork. Don't make a paste. It should be a little chunky.
5) Add the chopped onion, tomato, cilantro, lemon juice, salt & black pepper powder. Mix it well.
6) Serve with Nachos.

INGREDIENTS
2 ripe avocados
1 teaspoon minced ginger
2 cloves garlic, minced
1/3 cup chopped onion
½ cup chopped red pepper
½ cup chopped cucumber
1 tablespoon rice wine vinegar
