How To make Rice and Beans with Cheese
1 1/3 c Water
1 c Shredded Carrots
1 ts Instant chicken bouillon
1/4 ts Salt
15 oz Can Pinto / Navy Beans,drain
8 oz Plain lo-fat Yogurt
1/2 c Shredded lo-fat Cheddar chee
2/3 c Long grain Rice
1/2 c Sliced Green Onions
1/2 ts Ground Coriander
1 ts Hot pepper Sauce
1 c Lo-fat Cottage Cheese
1 tb Snipped fresh parsley
In a large saucepan combine water, rice, carrots, green onions, bouillon granules, coriander, salt, and bottled hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer for 15 minutes or till rice is tender and water is absorbed. Stir in pinto or navy beans, cottage cheese, yogurt, and parsley. Spoon into a 10x6x2" baking dish. Bake, covered, in a 350 deg F. oven for 20-25 minutes or till heated through. Sprinkle with cheddar cheese. Bake, uncovered, for 3-5 minutes more or till cheese melts. ************************************************************* Per serving: 282 calories, 19 g fat, 42 g carbohydrates, 4 g fat, 14 mg cholesterol, 489

Rice &Peas|| Baked Mac N Cheese|| Jerk Flavored Vege Chunks || Strings beans In Coconut Milk
Ingredients:
???? 3/4 cup vege chunks
1 onion ( sauté1/2 and add the other half later)
1/2 tomato
3 garlic cloves
2 stalks scallion
Few sprigs thyme
1 whole scotch bonnet pepper
2 tbsp jerk wet seasoning
3 tsp dry jerk seasoning
All purpose seasoning
Salt to taste
1/4 tsp browning
1 1/2 tbsp ketchup
1 1/2 cups water
Oil

3/4 cup cow peas or use one cup red kidney beans ( roughly 6 cups water to cook peas)
3 cups rice ( I use long grain parboiled rice)
1 1/2 cup coconut milk
Additional 1 - 1 1/2 cups water
All purpose seasoning
Salt to taste
Thyme
2 scallion
1 whole scotch bonnet pepper
Garlic powder
1/2 tsp ground pimento
Small Piece of ginger slice or grated
1 tsp sugar( optional)
????Mac N Cheese
1 1/2 cups or 12 oz elbow macaroni (cook based on the description on your package)
????Cheese sauce
2 cups plain unsweetened plant milk
1 and 1/2 pack 8 oz vegan cheddar
Vegan cheddar sliced cheese
1/2 cup plain vegan cream cheese
4 tbsp unsalted vegan butter ( I used earth balance)
4 tbsp plain flour
Salt and pepper to taste
1/2 tsp smoked paprika
All purpose seasoning. I used a mixture vegetable bouillon (1 cube) and royal montego all purpose seasoning
1 tsp garlic powder
1 tsp onion powder
About 2 tbsp nutritional yeast plus additional
* 1 tsp sugar to balance the flavors ( optional)
Baked at 350 degrees Fahrenheit for 35 - 40 minutes. Remove file paper the last 10 minutes.

Baked Chili Beans and Rice ~ Easy Cooking
In this easy cooking video, I cook some rice and chili beans in my toaster oven. The ingredients I used in this easy recipe are 1 cup of Jasmine rice, 2 cups of water, 15 oz of canned chili beans, and salt and Johnny's Seasoned Pepper to taste. The cooking time was 25 minutes in a 450 degree F oven. I also sprinkled on some shredded cheddar jack cheese at the end.
