How To make Rice and Beans with Cheese
1 1/3 c Water
1 c Shredded Carrots
1 ts Instant chicken bouillon
1/4 ts Salt
15 oz Can Pinto / Navy Beans,drain
8 oz Plain lo-fat Yogurt
1/2 c Shredded lo-fat Cheddar chee
2/3 c Long grain Rice
1/2 c Sliced Green Onions
1/2 ts Ground Coriander
1 ts Hot pepper Sauce
1 c Lo-fat Cottage Cheese
1 tb Snipped fresh parsley
In a large saucepan combine water, rice, carrots, green onions, bouillon granules, coriander, salt, and bottled hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer for 15 minutes or till rice is tender and water is absorbed. Stir in pinto or navy beans, cottage cheese, yogurt, and parsley. Spoon into a 10x6x2" baking dish. Bake, covered, in a 350 deg F. oven for 20-25 minutes or till heated through. Sprinkle with cheddar cheese. Baked Beans with Buttered Rice
Rice, when tossed with a dollop of butter, gets a luxurious aroma and flavour that is subtle but easily noticeable. A pungent topping of baked beans, onions, capsicum and ketchup complements the buttered rice very well, and when coated with grated cheese and baked, the Baked Beans with Buttered Rice is a truly irresistible preparation that tastes so exotic that you will celebrate a proud moment when people praise you for it!
Preparation time: 15 minutes. Cooking time: 10 minutes. Serves 4.
For the buttered rice
2 tbsp butter
2¼ cups cooked rice
Salt to taste
For the baked beans
1 cup canned baked beans
1 tbsp butter
¼ cup finely chopped onions
1 tsp garlic (lehsun) paste
½ cup finely chopped capsicum
½ tsp chilli powder
2 tbsp tomato ketchup
Salt to taste
Other ingredients
2 tbsp grated processed cheese
For the buttered rice
Heat the butter in a broad non-stick pan and add the rice and salt, mix well and sauté on a medium flame for 1 to 2 minutes and keep aside.
For the baked beans
1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
2. Add the garlic paste and capsicum and sauté on a medium flame for 2 to 3 minutes.
3. Add the chilli powder, baked beans, tomato ketchup and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.
How to proceed
1. Spread the rice in a 175 mm. (7) diameter microwave safe baking dish and spread the rice evenly all over.
2. Pour the baked beans mixture in the centre and spread it evenly.
3. Sprinkle the cheese evenly over it and microwave on HIGH for 3 to 4 minutes.
Serve immediately.

INGREDIENTS
2 lb. green beans, cleaned with ends removed
1/2 c. heavy cream
2 garlic cloves, thinly sliced
2 tsp. lemon zest
1 c. mozzarella
2/3 c. freshly grated Parmesan, plus more for garnish
kosher salt
pinch red pepper flakes
DIRECTIONS
1. Preheat oven to 400°. Place green beans into a shallow baking dish or skillet. Pour cream over beans and scatter garlic and lemon zest.
Season with salt and red pepper flakes.
2. Sprinkle with mozzarella and Parmesan and bake until beans are tender and cheese is melted, 25-30 minutes. If desired, broil until cheese is browned. Garnish with more parm and serve.

Baked Chili Beans and Rice ~ Easy Cooking
In this easy cooking video, I cook some rice and chili beans in my toaster oven. The ingredients I used in this easy recipe are 1 cup of Jasmine rice, 2 cups of water, 15 oz of canned chili beans, and salt and Johnny's Seasoned Pepper to taste. The cooking time was 25 minutes in a 450 degree F oven. I also sprinkled on some shredded cheddar jack cheese at the end.
