Momma's Red Beans
Momma's Red Beans
Drizzle of Olive Oil
Green Bell Pepper, chopped
Yellow Onion, chopped
2 cloves Garlic, minced
1.5 pound package Downhome Link Sausage, sliced into rounds
2 pounds Ground Beef
Pinch of Salt and pepper
2 teaspoons Creole Seasoning (homemade recipe below)
(2) 6-ounce cans Tomato Paste
(6) 16-ounce cans Pinto Beans with the juice
14.5-ounce cand Beef Broth
In a large pan on medium heat add the olive oil, bell pepper, onion and garlic. Cook for a few minutes and add the sausage rounds. Cook until the sausage is browned a bit. Add the ground beef and cook stirring to break it up while it browns. Add the salt, pepper and creole seasoning. Once the meat is cooked through add the tomato paste and stir it in. Then add the beans and the beef broth. Bring to a boil, turn down the heat and cover for about 15-20 minutes of simmering. Just long enough to cook a pot of rice and a pan of cornbread to go with it. Don't forget to say the blessing and enjoy!
CREOLE SEASONING RECIPE:
2 Tablespoons Onion Powder
2 Tablespoons Garlic Powder
2 Tablespoons Oregano
2 Tablespoons dried crushed Basil
1 Tablespoon dried Thyme
1 Tablespoon Black Pepper
1 Tablespoon Cayenne Pepper
5 Tablespoons Smoked Paprika
1 to 2 Teaspoons Salt (optional) I make mine with no salt so I can control the amount of salt in each recipe.
Mix all together and store in an airtight container.

18 oz. Cajun andouille sausage
1 1/2 cups white rice, cooked
1 medium yellow onion, chopped
1 green bell pepper, chopped
3 ribs celery
6 cloves garlic
3 cups chicken broth
3 cups water
1 tsp garlic and herb seasoning
1 tsp chicken bouillon powder
1 1/2 tsp Cajun seasoning

1 large Yellow Onion, diced

1 small Red Bell Pepper, diced

1 tsp. Salt or to taste
1 tsp. Dried Oregano
½ tsp. Dried Thyme
½ tsp. Paprika
⅛ tsp. ground Cayenne Red Pepper, or to taste

6 to 7 cups Low Sodium Chicken Broth
2 Bay leaves
½ cup chopped Fresh Parsley plus more for garnish

1 ½ cups Long Grain Rice
