1 pound beef sirloin steak see note 1 pound fresh apricot :
pitted, quartered 3/4 cup sweet red onion -- chopped 2 tablespoons rice vinegar 2 tablespoons sugar 1/2 teaspoon five-spice powder
Trim excess fat from steak. Broil steak 4 inches from heat, 5 to 7 minutes per side for rare or until desired doneness. Keep warm. Combine remaining ingredients in a medium saucepan; bring to a boil. Simmer 5 minutes, stirring constantly. Slice steak across the grain into thin slices. Pour apricot relish over steak slices and serve.

INGREDIENTS: 4 1/2 cups-5 cups fresh finely chopped apricots, 1 cup granulated sugar, 1/4 tsp to 1/2 tsp cinnamon, 1/4 cup all purpose flour, 1-2 tsp fresh squeezed lemon juice, 1 tsp sugar for topping, lite cinnamon. 1 egg beaten with 1/4 tsp water beaten in egg for brushing top crust with egg wash.
INSTRUCTIONS: Chop 4 1/2 to 5 cups of fresh apricots finely, mix in with all dry ingredients and lemon juice. Fill bottom pie crust. Top with second layer of pie crust, brush with egg wash sprinkle sugar and cinnamon on top. Make 4-6 slits in center of pie for ventilation. Place foil around edge of crust. Bake 35-45 minutes in 425•F preheated oven. ( in gas oven 400•F)
Cool 2 hours ENJOY ???? SERVE WITH VANILLA ICE CREAM

3 1/2 cups all purpose flour
2 cups or 500ml apricot jam ( store bought )
1 1/4 cup unsalted butter ( cut into small cube )
1/4 cup granulated sugar
1 tsp salt
1/2 tsp baking powder
1 tbsp lemon juice
1 tbsp real vanilla extract
1 tbsp rum extract
1 tbsp brown sugar
bake on 375F for 25 to 30 minute and ENJOY!!

Hurray! It’s apricot season!!
Today we’re turning some freshly picked apricots into some delicious apricot cinnamon muffins
Super easy. Oil free. Freakin delicious
You’ll need-
About 15 fresh apricots de pitted. And blended up just a little bit
1 can coconut milk
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
Mix these ingredients in a bowl
To this add-
2 cups oat flour (I make mine in my blender... super quick and easy)
1/2 cup oats (for texture)
1/4 cup flax meal
1/2 cup swerve zero calorie sweetener
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
Mix into wet ingredients with a spatula and divide into muffin tins. Bake immediately at 350 degrees Fahrenheit for about 25 minutes. When toothpick comes almost clean. Turn off oven and let finish cooking while they cool.
Enjoy as is- or makes this super simple glaze
Using 1 can of coconut milk that has been in your fridge for at least overnight.
Separate the solids and blend them with about 1 cup of confectioners sugar. I used swerves zero calorie version. Add 1 teaspoon vanilla and you’re good to go.
Drizzle over cooled muffins and enjoy!!
