How To make Quick Cheddar Bread
3 3/4 c Unbleached Flour 2 1/2 c Cheddar; Sharp
5 ts Baking Powder 1 1/2 c Milk
1/2 ts Salt 2 ea Eggs; Lg, Slightly Beaten
1/3 c Butter
Combine the dry ingredients, then cut the butter into the flour until the mixture resembles coarse crumbs, then add the cheddar cheese. Combine the milk and eggs then add the mixture to the cheddar mixture. Stir until just moistened, then spoon into a greased 9 X 5-inch loaf pan. Bake at 375 degrees F. hour. Remove from the pan immediately and let cool on a
wire rack. -----

Recipe:
2 cups warm water
1 & 1/2 tbs quick rise yeast
1/4 cup sugar
2 tbs olive oil
2 tsp salt
5 cups AP flour
8os shredded cheddar cheese
1/4 c sliced jalapeños
Whisk together the warm water, yeast and sugar until combinded let sit for a couple of minutes. Next you’re going to add in your olive oil, salt and flour. Add dough hook to your mixer and knead for 6 minutes. Add the cheese & jalapeños the last minute of kneading. you don’t have to do this step if you don’t, but I added some olive oil to the bowl put the dough in there and let it sit for five minutes then I shaped the dough, place on parchment paper, or a silicone mat, then put into Dutch oven cover let rise for 25-30 minutes. preheat oven to 350° bake for 35-40 minutes depending on your oven. I bake for 25 minutes covered, and then 15 to 20 minutes, uncovered, or until it’s golden brown.

Sourdough jalapeno cheddar bread
I am on a journey to incorporate more whole grains and sourdough into my baking.Also, trying to make less processed foods.
Jalapeno Cheddar Bread (1 loaf)
100 grams active sourdough starter
330 grams water
-Mix until starter is disolved
500 grams of bread flour (AP flour will also work)
-Mix into a shaggy dough, cover and let autolyse for 1 hour.
-While the dough is hydrating during the autolyse process dice 4 oz of cheddar cheese and 1/3 cup of jalapeno peppers
10 grams of salt
30 grams of warm water
-Mix salt and water to dissolve the salt, then add the salt mixture to the dough and work into the dough until it forms a cohesive mass.
-Let rest covered for 30 minutes.
-Do a set of stretch and folds. Let the dough sit covered for 30 minutes
-Do a second set of stretch and folds, but this time slowly add the cheese and peppers.
-Let the dough sit covered for 30 minutes and do a set of stretch and folds.
-Now leave the dough covered and let it rise for 4-5 hours until it has risen at least 50%
-Shape the dough and place covered in the refrigerator over night up to 48 hours.
-Pre-heat a dutch oven inside of your over to 450ºF
-Remove the dough from the refrigerator and score the loaf prior to placing in a dutch oven
-Bake covered 25 minutes and uncovered for 20 minutes.
-Let the bread cool at least 2 hours before slicing.

Ingredients:
•1 cup fresh, coarse grated Parmesan cheese
•2 ½ cups all purpose flour
•1 tablespoon baking powder
•1 teaspoon salt
•⅛ teaspoon cayenne pepper
•⅛ teaspoon white pepper
•4 ounces cubed Cheddar cheese
•½ cup sour cream
•3 tablespoons cooled, melted butter
•1 cup whole milk
•1 egg
Directions:
•Melt 3 tablespoons of butter and allow to cool to room temperature.
•Preheat an oven to 350 degrees.
•Prepare a bread loaf pan with cooking spray.
•Sprinkle ½ cup of the coarse grated Parmesan cheese into the bottom of the bread pan and set aside.
•In a large bowl, whisk together the all purpose flour, baking powder, salt, cayenne pepper and white pepper.
•Add the cubed Cheddar cheese and make sure that each cube is coated in the flour mixture.
•In a separate large bowl, whisk together the sour cream, cooled melted butter, whole milk and egg until the mixture is smooth.
•Fold the wet mixture into the dry mixture with a spatula. A thick batter will form.
•Spoon the batter into the bread pan.
•Sprinkle another ½ cup of the coarse grated Parmesan cheese over the batter.
•Bake in a 350 degree oven for 45 minutes.
•Let cool for 20 minutes.
