Directions:

How to Make Delicious Fermented Buckwheat Pancakes | Gluten Free & Easy
Buckwheat is extremely common where I’m from and it is by far my favourite whole grain to eat. Although, it is technically not a grain. It is a seed of a grass related to rhubarb. Shaped like a four-sided triangle it looks very unique. Once cooked it puffs up and cracks open.
Most commonly whole buckwheat comes in two varieties – untoasted or toasted. The toasted version is more flavourful and is my personal favourite.
Buckwheat flour was something I had not been aware of as of recently. I never even knew buckwheat pancakes are a thing. But I am happy that I finally tried making something with buckwheat flour.
The pancakes are soft, bouncy, super flavourful, nutritious, and completely gluten free. They can be fermented with yeast or leavened with baking soda and baking powder. Fermentation does boost the flavour, but there is nothing wrong with the quick version.

Original Text:
Buckwheat cakes. – One quart The Goshen buckwheat flour; four tablespoonfuls of yeast; one teaspoonful salt; one handful The Goshen Indian meal; two tablespoonfuls molasses—not syrup. Warm water enough to make a thin batter. Beat very well and set to rise in a warm place. If the batter is in the least sour in the morning, stir in a very little soda dissolved in hot water. Mix in an earthen crock, and leave some in the bottom each morning—a cupful or so—to serve as sponge for the next night instead of getting fresh yeast. In cold weather this plan can be successfully pursued for a week or ten days without setting a new supply. Of course you add the usual quantity of Goshen flour, etc. every night, and beat up well. Do not make your cakes too small. Buckwheats should be of generous size. Some put two-thirds buckwheat, one third oatmeal omitting the Indian meal.
Modern Version:
Buckwheat Pancakes
480g buckwheat flour
30g corn grits
28g (4 packets) dry active yeast
40g (2 tbsp) molasses
1 tsp salt
24 oz. warm water
Beat together in a very large mixing bowl or stock pot with a lid and set to rise overnight in the fridge. Ladle mixture onto a hot, greased griddle, flipping the cakes after a few minutes to cook through. Serve hot.

Ingredients:
►2 ripe bananas or 50gr apple sauce (1/4 cups)
►120 ml any plant-based milk (1/2 cups)
►1 tbsp pure maple syrup (20 gr)
►100 g buckwheat flour (1/2 cup)
►3 g bicarbonate of soda
►5 g cinnamon
►pinch of salt

►1 mixing bowl
►1 frying pan

1. Mash the bananas into a paste
2. Mix all the dry ingredients
3. Add the wet ingredients to the dry ones and mix well
4. Let it sit for about 15 minutes to rest
5. Use 1/3 cup for each pancake, fry the pancakes on low to medium heat for about 2-3 minutes each side
6. Place them on a plate and decorate for your liking (I used blueberries compote and agave coconut yogurt)
7. ENJOY!

I wanted to create an easy healthy buckwheat flour cake recipe – 3 ways or 3 recipes. First, a vegan buckwheat cake with banana, that is made with a flax egg, a second recipe is buckwheat flour carrot cake, and a gluten-free apple cake recipe. This recipe is a no-dairy buckwheat flour cake recipe base.
Buckwheat flour is naturally gluten-free, so it is perfect for a gluten-free cake recipe. I love the nutty flavour it gives to this style of cake.
I have made this dairy-free using oat milk and vegetable oil, which helps this cake stay moist for days. You could swap out the buckwheat flour to use regular flour and it will work too. If you like more extras in your carrot cake, feel free to add more carrots, nuts or raisins.

275g / 9.7 oz buckwheat flour (or swap for plain flour)
250ml / 8.5 fl oz vegetable oil or melted butter
200g / 7.1 oz sugar ( dark brown, light brown or castor) - this could be reduced to 5.3 oz if needed
500g / 1 lb 2 oz mashed banana (no skins) or peeled chopped apple or peeled grated carrots
2 eggs (or vegan option - 2 tablespoons flaxseed powder 6 tbsp water - mix and leave to rest in the refrigerator for 10-15 mins)
1 tsp bicarbonate of soda
1/2- 1 tsp powdered ginger (optional)
1 tsp vanilla extract
2 tsp ground cinnamon
1/4 tsp salt (optional)

① Preheat oven to 180˚C or 170˚C fan-forced, 360˚F or Fan-forced 340˚F.
② Paper line your square tin, 23cm round tin or large bundt ring pan.
⓷ Beat vegetable oil and sugar together then add the eggs and combine.
④ Mix in flour, cinnamon, bicarbonate of soda, salt and vanilla; mix well.
⑤ Stir in the diced apples or mashed banana or grated carrots.
⑥ Spoon the mixture into the prepared tin (it will be very thick).
⑦ Bake in preheated oven for 30 to 40 minutes.
⑧ Cool the cake in the tin for 10 minutes before removing it.
