How To make Buckwheat Pretzels
3 1/2 c Flour; all-purpose
2/3 c Flour; buckwheat (light or
Whole 2 ts Salt
2 Eggs
1 c Milk
1 Egg white; slightly beaten
Sesame seeds; poppy seeds And/or coarse salt ------------------------AH-CHOO, T.D. IN MD.- 03/21------------------------ In large bowl, mix two flours and salt. Add eggs and milk; blend to form a medium soft dough. Knead dough on a floured board for a few minutes. Place dough into a sealed container or zipper-top plastic bag; let rest for about 20 minutes. Cut dough into 12 or 16 pieces, depending upon pretzel size you prefer. Roll each piece into a rope and a twist into desired shape. Place pretzels on a lightly oiled baking sheet; brush with egg white. Sprinkle with salt, sesame or poppy seeds. Bake at 425d for 15-20 minutes. Serve warm. KETO TORTILLAS
(makes eight 4-inch tortillas)
½ cup almond flour
⅓ cup lupin flour
1 tablespoon xanthan gum
½ teaspoon salt
6 tablespoons water
1️⃣ In a small bowl, combine almond flour, lupin flour, xanthan gum and salt. Pour in water and mix until dough forms. The dough should feel similar to play-doh.
2️⃣ Divide dough into 8 balls to make mini tortillas (4”) or 4 balls to make 6” tortillas.
3️⃣ Flatten into a tortilla using a tortilla press. Sandwich a ball between two sheets of parchment paper and press down to flatten. Can flatten using a rolling pin as well.
4️⃣ Place a tortilla in a skillet heated on high heat. Cook for 30-60 seconds or until the underside starts to turn brown in some spots. Flip and cook the other side for 30 seconds. Remove from skillet and place back on parchment paper to cool.

Spelt? Bavarian? Pretzels? Don’t get yourself in a twist - or do - over this Spelt Bavarian Soft Pretzel recipe.
Let’s be real, who has actually turned down a warm soft pretzel? Especially the ones from that one pretzel spot at the mall that always had samples. We haven’t! And we will continue our soft pretzel obsession with these Spelt Bavarian Soft Pretzels. Just to be clear - a Bavarian Pretzel is the same thing as a German Pretzel, all equally delicious. This recipes however, includes a magic ingredient - spelt flour! Why spelt flour you ask? Well, why not! Spelt is a good source of fiber, protein and makes for one heck of a delicious yeast dough. It also has a warm, nutty, and slightly sweet flavor to it.
We recommend dipping these soft pretzels into a decadent and gooey cheese sauce, or try a traditional German breakfast - soft pretzel with sweet coarse mustard and a Weisswurst (a type of Bavarian sausage). Or do as the Germans do and enjoy soft pretzels as an on the go snack!

Today I'd like to show you how to make healthy vegan buckwheat-quinoa bread. The recipe is gluten-free, soy-free, nut-free and sugar-free.

Here is the recipe:
-Buckwheat (soaked for 4 hours at least)- dry weight 250g
-Quinoa (soaked for 4 hours at least)- dry weight- 200g
-Chia seeds- 40g
-Water- 200g
-Oil- 4tbsp
-Baking soda- 1tsp
-Apple cider vinegar- 1tbsp
-Salt. 1tsp
-Sunflower seeds/sesam seeds to top

A 600 year-old Mardi Gras tradition & recipe!
Traditional Belgian pancakes eaten during the Carnaval de Binche, a 600 year-old carnival festival that lasts three days and has many rituals and costumes. These pancakes are made with buckwheat, beer, and lard, and sandwiched together with a strong Walloon cheese called boulette. Shredded, strong cheese can be substituted for the boulette.
