Pumpkin Spice Soufflé Pancakes Recipe!
The pumpkin spice soufflé pancakes might just be the perfect fall breakfast or a snack, fluffy & delicious!
[Mixture Ingredients]
2 egg yellows
60g cake flour
1 tbsp milk
1 tsp honey
1/2 tsp baking powder
1 tsp pumpkin spice
1 tbsp pumpkin puree
[Meringue Ingredients]
3 egg whites
2 tbsp sugar
[Toppings]
Pumpkin spice
Butter
Maple syrup
1. Separate eggs into 3 whites & 2 yellows.
2. Mix the yellows with the above ingredients.
3. Make meringue by mixing and gradually adding sugar. It's ready when you can spike it up and doesn't fall out when upside down.
4. Add ~1/3 of meringue into mixture, mix evenly, pour back into meringue.
5. Gently mix it up until it's all even.
6. Heat pan to low heat, coat in oil.
7. Pour 1 scoop per pancake, add water, close lid.
8. Steam for total of ~8 minutes (can vary), adding more mixture at the 2 & 4 minute mark to get the optimal thickness.
9. Flip them over, add more water, steam for ~4 minutes.
10. Stack them up, add the toppings, enjoy!

Pumpkin Recipe Series Episode 1: Fluffy pumpkin pancakes. Thick fluffy pancake lovers unite!

Pumpkin Pancakes
2c flour
3 tsp baking powder
¼ tsp baking soda
⅛ tsp salt
¼ c sugar
1 ¼ tsp cinnamon
½ tsp pumpkin spice
1 ½ c whole milk
2 eggs
½ c pumpkin puree
2 tsp vanilla
4 TBS melted butter
HOW TO
1. In a large bowl add dry ingredients: flour, baking powder, baking soda, salt, sugar, pumpkin spice, and cinnamon. Whisk until combined.
2. Add the wet ingredients. Milk, melted butter, egg, pumpkin, and vanilla. Mix until combined. The mixture will be lumpy this is OK. Allow the batter to rest for 10 minutes. Don’t skip this step.
3. While the batter is resting preheat the oven to 200 degrees to keep the finished pancakes warm for serving.
4. Preheat a nonstick skillet or griddle over medium heat. Using a spoon, ladle, or ⅓ measuring cup, pour the batter onto the preheated pan/griddle and cook until bubbles start to form on top.
5. When the bubbles start forming and the bottom of the pancake is golden brown, flip the pancakes and cook for another 2 minutes until golden brown. Remove from the skillet and onto an oven-safe plate. Place into the oven with aluminum foil over the top to keep the finished pancakes warm. Repeat steps 5 and 6 with the remaining batter.
6. To serve, slather softened salted butter, drizzle with maple syrup,and top with toasted pecans. Enjoy!
