How To make Presidental Cinnamon Glazed Almonds
1/3 c Butter
2 Egg whites, room temperature
Pinch of salt 1 c Sugar
3 c Whole almonds
4 ts Cinnamon
Preheat oven to 325 degrees. Place butter on a 15 1/2 x 10 1/2-inch jellyroll pan; place in oven to melt butter, about 7 minutes. Meanwhile, beat egg whites with salt until frothy; gradually add sugar, beating to stiff peaks. Gently fold in almonds and cinnamon. Pour almond mixture onto jellyroll pan; toss with butter. Bake about 40 minutes, tossing every 10 minutes, until almonds are crisp. Serve warm or at room temperature. Store cooled in air-tight containers up to 2 weeks. Preparation time: 10 minutes Cooking time: about 50 minutes

{ 冰島食事 Episode #5 }冰島聖誕點心:奶油杏仁餅乾 | Icelandic Presidential Cookies

冰島的聖誕餅乾多得令人眼花繚亂,繼去年首次挑戰了「葉子薄餅 (Laufabrauð)」,今年也來嘗試製作了另一款名為「Bessastaðakökur」的餅乾。
Bessastaðakökur 是由 「Bessastaðir」(冰島總統官邸的名字) 以及 「Kökur」(蛋糕) 兩個單字組成。這是一款使用大量無水奶油 (澄清奶油)、麵粉、糖以及杏仁碎片製作出來的點心, Bessastaðakökur 的中文可直譯為 「總統餅乾」,但我覺得用「奶油杏仁餅乾」 來稱呼它可能更為簡單明瞭。
你一定很好奇,究竟這款餅乾跟「總統」有什麼關聯呢?
1980年6月30日,冰島舉行總統大選,當年50歲的 Vigdís Finnbogadóttir 成為世界首位民選女總統。之後,Vigdís 成功連任三次,在位時間一共長達十六年,期間都居住在冰島的總統官邸 Bessastaðir。
Vigdís 說,自她有記憶以來,家裡的廚房就經常飄著烤餅乾的奶油香氣。 當她搬到 Bessastaðir 時,她也將這份珍貴的家傳食譜一同帶進總統官邸。每逢特殊節日,或是只要有賓客到訪,她都會親自烘烤奶油杏仁餅乾給大家品嚐 ── 「總統餅乾」因而得名。如今,這款餅乾已成為冰島人在節慶期間的居家烘焙之一。酥脆厚實的口感與濃濃的奶油香氣,搭配一杯熱牛奶或黑咖啡超級完美!
這支影片所呈現的「奶油杏仁餅乾」,原料及作法順序完全遵循 Vigdís 的家傳食譜,只不過在「糖度」的比例上,我還是做了些許調整。雖然我是在冠有「全糖市」之稱的台南出生長大,但「全糖」對我來說實在很「母湯」。這份原始食譜中的糖份比例對我來說實在是太超過了,因此我把它縮減為原糖量的三分之一 ── 剛剛好的「微糖」甜度,不僅適口許多,也更能品嚐到奶油的香醇喔!

❁ 奶油杏仁餅乾 (約可製作16塊直徑約5公分的餅乾) ❁
► 食材 :
奶油 250 克
中筋麵粉 (All Purpose Flour) 250 克
糖粉 (Icing Sugar) 40 克
白砂糖 (White Sugar) 40 克
杏仁豆 適量
粗糖 (Coarse Sugar) 適量
全蛋蛋液 適量
► 作法:
1. 奶油加熱融化,倒入容器,放入冰箱冷卻
2. 待奶油完全凝固,將沈澱在奶油塊底部的乳清清洗掉,並切成小塊
3. 準備一些杏仁豆,切碎先放置一旁
4. 將麵粉、糖粉以及白糖倒入碗中,大致混合一下
5. 在碗中加入切塊奶油,藉由手溫將奶油塊軟化,確認每塊奶油都有被麵粉與糖覆蓋到
6. 可用機器低速攪拌,讓乾濕原料更能確實充分混合
7. 接著再用雙手及刮刀輔助,將麵團揉到表面光滑均勻
8. 桌面及麵團上各撒一些麵粉,將麵團擀平,擀至約一公分的厚度
9. 使用直接約4-5公分的壓模壓出圓形餅乾,小心地將餅乾拿起,並放置在烘焙紙上
10. 把剩餘的麵團重新桿平,使用壓模壓出更多的餅乾
11. 在每個餅乾上方刷上蛋液,中間撒上粗糖和杏仁
12. 放入180度的已預熱烤箱中,烤10分鐘左右
13. 取出放涼後即可享用
