How To make Prawn Vindaloo (Hot Prawns)
1 tb Garlic;sliced
1 tb Hot red chili peppers, fresh
-sliced 2 ts Cumin seed; ground
1 ts Mustard seeds
1 ts Black peppercorns
1 ts Tumeric; ground
1/4 c Cider vinegar
1/4 c Corn oil
1 c Onion slices;ground to paste
2 lb Prawns; or large shrimp
-peeled & deveined 1/2 c -Water
1 ts -Salt
Grind the garlic, chili, cumin seed, mustard seeds, peppercorns & tumeric together in a processor with 2 Tbsp of vinegar to act as a lubricant. Heat the oil in a pan and fry the onion paste over moderately low heat until light brown. Add the ground spices and continue to fry the mixture until it turns reddish, with a 'crumbled' look. Add the prawns & cook, stirring frequently for 10 minutes. Add the balance of the vinegar, the water and salt and continue to simmer, uncovered, for 5 minutes more. There will be very little sauce. Serve warm VARIATION: The prawn vindaloo can be prepared as a proper pickle, which means that it is a bottled (or refrigerated condiment) used now and then with other foods as an adjunct to the meat or fish dishes being served. Should you wish to prepare this as a pickle, follow the instructions, but omit the onions & and the water & cook the prawns separately in 2 Tbsp of oil before adding them to the mixture. Shrimp Vindaloo or Prawn Vindaloo is a hot, spicy, and authentic Indian Goan-style curry. It is usually made with shrimp that is simmered in authentic onion tomato curry. The recipe I have shared here demonstrates how to make Shrimp Vindaloo using Vindaloo Paste and Sauce with easy step-by-step instructions for you to try and enjoy at home. But can also make the curry classically as I have done it for Chicken Vindaloo and Lamb Vindaloo. This Shrimp Vindaloo is one best seafood curries that taste great with rice, roti, paratha, and similar other dishes for lunch and dinner.

Ingredients:
For Paste
4 Cloves
5 Cardamom
1 tsp Cumin Seeds
1 tsp Fennel Seeds
2 tbsp Coriander Seeds
14 Dry Red Chili
¼ tsp Tamarind Paste
1 tbsp Vinegar
3 tbsp water, or adjust to grind
For Marination
2 lbs / 900 gm Shrimp
1 tsp Chili Powder
¼ tsp Turmeric Powder
Salt, as needed
For Shrimp Vindaloo
2 tbsp Oil
2 Bay Leaves
1 small Cinnamon Stick
1 cup Onion, chopped
1 tsp Ginger Garlic Paste or grated ginger garlic
1½ cup Diced Tomato
1 cup Water
Salt, as needed
1 tsp Sugar or Jaggery
2 tsp Coriander Leaves, to garnish (See Notes Section for more recipe ideas and tips)
Recipe Notes:
1. Roasting Spices - Roasting the spices to make vindaloo paste gives a unique aroma and taste to your vindaloo curry
2. Marinating Shrimp - I have made this Shrimp Vindaloo using Vindaloo Sauce that I have shared already in my earlier post. But you can also make the classic curry as I have prepared for Chicken Vindaloo and Lamb Vindaloo
3. Coconut Milk - Even though the classic recipe does not call for coconut milk, you can also use it to mellow down the spice level of the curry. If you are trying to add it, then I recommend using ½ cup of coconut milk and ½ cup of water instead of 1 cup of water that I have used here
4. Serving - This hot and spicy Shrimp Vindaloo tastes great with rice, roti, or chapati

Ingredients for Chilli Prawns:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Prawns/Shrimp - 500 gms (250-300 gms. net after shelling & deveining)
1st Marinade:
- Salt- 1/2 tsp
- Turmeric Powder- 1/4 tsp
2nd Marinade/Batter:
- All Purpose Flour- 2 tbsp
- Cornflour- 2.5 tbsp
- Ginger Garlic paste- 1/2 tsp
- Pepper Powder- 3/4 tsp
- Soy Sauce- 1/2 tsp
- Egg, whisked- 1
Tempering:
- Garlic chopped- 3 tsp
- Ginger chopped- 1 tsp
- Whole Dried Red Chillies- 3-4
- Green Chillies sliced- 3
- Spring Onion whites, chopped- 3( 2 tbsp)
Sauces:
- Dark Soy Sauce- 2 tsp
- Red Chilli Sauce- 2 tbsp
- White Vinegar-1 tsp
Other Ingredients:
- Onion petals- 1 small onion (50 gms)
- Green Peppers (Capsicum), cubed - 1 cup
- Red Peppers, cubed- 1 cup
- Spring Onion greens, chopped- 3 (3 tbsp)
- Salt- pinch, for seasoning
- Pepper Powder- pinch, for seasoning
- Oil- 1.5 tbsp and oil for deep frying
- Corn slurry- 2 tsp corn flour mixed in 2 tbsp water
Preparation:
- Clean, shell and devein the prawns, wash and pat dry.
- Marinate with 1/2 tsp salt and a 1/4 tsp of turmeric powder. Set aside for 15 mins.
- Peel and chop the garlic and ginger, slice the green chillies. Take out onion petals or cut into cubes.
- Cut the green and red peppers into cubes.
- Chop the spring onion whites and greens separately and set aside.
- Now add all the ingredients for the batter to the marinated prawns and mix it well to coat the prawns well. Set aside for 5 mins while heating the oil for deep frying the battered prawns.
- Once the oil is medium hot, add the battered prawns one by one in hot oil and fry for around 2-3 mins till golden. Fry in batches if required.
- Strain and keep it on a plate. Repeat for the balance.
Process:
- Take a wok/kadai and heat 1.5 tbsp of oil.
- Add the chopped garlic & ginger and give a stir for 15 secs.
- Now add the whole red chillies & sliced green chillies and give a stir for 15 secs.
- Now add the spring onion whites. Give a stir for 15 secs.
- Add the onion petals, cubed green and red peppers. Add salt and pepper powder to season.
- Mix and sauté on high heat for 1 min.
- Now add the fried prawns, mix and keep sautéing on high heat for another 30 secs.
- Now pour in the sauces and mix it well to coat the fried prawns. Stir fry for 1 min and then add the cornflour slurry. Mix and stir fry on high heat for 1 min till it dries up and coats the fried prawns.
- Add some chopped spring onion greens, mix and serve hot.

This shrimp recipe is very easy and quick to make, but it is very delicious. I used small sized prawns but you can use medium or large sized ones as well.
Ingredients required for making shrimp masala - Serves 4 to 5
* 580 gm/1.3 lb shrimp or prawns
* 250 gm/ 9 oz / 1 very large onion
* 20 gm/ 1 oz ginger
* 20 gm/ 3 large garlic cloves
* 300 gm/ 11 oz/ 2 large red tomatoes
* 1 & 1/2 teaspoons Kashmiri red chilli powder. Please adjust proportion according to your preference. You can also use a combination of paprika and chilli powder or only paprika if you want to avoid the heat totally.
* 1/2 teaspoon turmeric powder
* 2 teaspoons ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* half a teaspoon garam masala powder.Home made Garam Masala -
* 1 teaspoon heaped salt or as per taste
* 1 teaspoon sugar (optional)
* 1 teaspoon Mexican crema/sour cream/heavy cream/any cooking cream/4 tablespoons coconut milk (can add more)
* 1 green chilli (optional)
* chopped coriander for garnish
* 4 To 5 tablespoons oil
Serve it with hot steamed rice.
** Please note that shrimp gets rubbery if overcooked.

Vindaloo is originally a Portuguese recipe which is widely popular in Goa and parts of the Konkan region. It is usually made with pork but one can try making it with prawns and chicken as well.
The readymade Tulua paste which I have used is pretty good... but you can make your own paste at home.
Ingredients.. For 400 gm prawns...
Make a paste of 8 kashmiri red chilli paste, 1 tbspn of ginger, garlic paste, 8 black pepper corns, 1tspn cumin pwdr,
4 cloves, a pinch of turmeric pwdr.
Also add 1 tspn of vinegar or toddy vinegar.
Salt and jaggery or sugar as per taste.
Add this to the prawns and marinate it for 15 min.
