Under 10 Minute Dinner - Try this fresh and easy Shrimp & Cucumber Salad with Dill
Spring is hear and Chef Dylan is in the kitchen teaching us how to make a fresh and easy seafood dish that is uses local seafood and produce while keeping it light. This Shrimp & Cucumber Salad sandwich recipe is a must-try for a week day lunch, party, or quick side dish in a pinch.
Recipe
Ingredients:
For the Shrimp:
2 Lb. Shrimp, Peeled/Deveined/Tail Off/Split
½ Cup Dill, Chopped
½ Onion, Diced
1 Lemon, Halved
2 Tbsp. Garlic, Minced
1 Tbsp. Salt
½ Tbsp. Pepper
For Dressing:
1 Cup Dill, Chopped
1 Tbsp. Garlic, Minced
½ - 1 Cup Mayo (Depending on Taste)
½ Cup Sour Cream
½ Cup Greek Yogurt
1 Cup English Cucumber, Diced
(About 1 Cucumber)
¾ Cup Red Onion, Minced
1 Lemon, Zested
½ Tbsp. Sugar
Pinch of Salt and Pepper to taste
Preparation:
1. Place a sheet pan in the freezer to get cold.
2. In a large pot, add half gallon of water, dill, garlic, onion, whole lemon with juice, salt and pepper. Bring to a boil and then reduce to a simmer until the steam is fragrant.
3. Split the shrimp completely in half. Add the shrimp and turn heat off. Let shrimp cook until opaque.
4. Remove shrimp with a strainer spoon, and place onto the cold sheet pan and return to freezer to rapidly chill. Do not freeze shrimp.
5. To make the dressing, in a large bowl combine the dill, garlic, mayo, sour cream, yogurt, cucumber, onion, lemon zest, sugar, salt and pepper. Whisk to combine completely.
6. Remove the shrimp from the freezer and add to the dressing. Use a spatula to gently fold the shrimp and dressing together.
7. Serve on either lettuce wraps or your favorite bread. Enjoy!

Lately I’ve been enjoing simple ans easy meals. This salad is one of my favourite. It is light, but filling and perfect for summer days. Prawns are going really well with garlic and lemon. Enjoy! Please subscribe for more recipes, thank you!
Ingredients for 1:
150 gr cooked king prawns (if using raw prawns, cook them for 5-7 minutes total)
1/2 of avocado
Handful of your favourite salad leaves
Handful of cherry or plum tomatoes
1/4 of red onion
4 garlic cloves
1/2 of sweet paprika
1/2 tsp of turmeric
1/2 tsp of salt
For dressing:
3 tbsp of olive oil
1 tbsp of lemon juice
1/2 tsp of salt
1/2 tsp of black pepper
1/2 tsp of dry garlic (or minced fresh)

Mayo Teriyaki Prawn
550 g - frozen prawns / udang
to taste - salt / garam
1 cup - corn starch / tepung maizena
4 tbsp - olive oil
4 tbsp - mayonnaise/ mayones
Sauce Mix:
4 tbsp - soy sauce / kecap asin
4 tbsp - mirin
4 tbsp - sake
2 tsp - all purpose flour / tepung terigu
2 tsp - water / air
1 cup - zucchini / timun
n/a - nori seaweed
