How To make Pork Vindaloo
2 1/2 lb Lean pork
1 c Oil
1/2 ts Mustard
1 c Vinegar
5 Green chillies chopped
1 Half-inch cube ginger
-chopped 1 ts Turmeric
2 ts Salt
1 Sprig curry leaves
Spices to be ground -together 30 Red chillies
1/2 oz Garlic
1 Half-inch cube ginger
2 ts White cummin
2 ts Mustard
1 lg Onion
1 (2/3-inch) stick cinnamon
3 Cloves
Cube pork. Heat oil, season with mustard. Add sliced green chillies and ginger and fry until dry. Add ground spices with turmeric powder and fry until oil starts to separate. Add meat and curry leaves and mix well. Fry 3 5 minutes.
Add vinegar and salt. cover and cook on slow stove until meat is tender and oil floats to the top, about 1 1/2 to 2 hours. Do NOT add water! This is and oldie but a goodie.

Goan Pork Vindaloo
1 kg pork (boneless with fat)
Ingredients required for masala paste / marinade
10-12 dried Kashmiri chillies
1/2 tsp cloves
1 tsp (or 20-25 ) black peppercorns
1 tsp cumin seeds
1” cinnamon stick
1/4 tsp turmeric powder
8-9 garlic cloves
1” ginger piece
1 tsp mustard seeds (missed to show in the video)
1/2 salt
1/4 cup vinegar
Other ingredients
1 large onion OR 2 medium onions (chopped)
1 tsp Sugar
Salt

Vindaloo Recipe—Anglo-Indian Recipe—Christmas Special
Pork vindaloo is hot-sour-spicy, almost pickle-like, braise of fatty pork with lots of garlic, vinegar and chillies. Vindaloo was born in Goa sometime in the 16th or 17th century after the Portuguese set up colony there. The word vindaloo comes from the Portuguese recipe 'vino de alhos' where 'vino' refers to (wine) vinegar and 'alho' is the word for garlic. Vindaloo is a fusion of Portuguese, Goan and South Indian ingredients and cooking.
This particular recipe comes from the book 'Curry: A Tale of Cooks and Conquerors' by Lizzie Collingham. The book, besides being one of the best writings on Indian food history, has some fantastic recipes such as this one. We looked at a lot of recipes, both online and in books, but honestly this recipe of vindaloo—though a little more elaborate in the number of spices—is in our opinion one of the best.
Considering just how good this vindaloo tastes, it is really easy to make if you have all the ingredients. While the original recipe used pork, you can use duck instead of pork too.
