How To make Pork Chops and Fried Rice
1 3/4 c Water
1 1/2 c Rice
2 sl Bacon
2 Eggs, beaten
2 tb Water
3 tb Soy sauce
1/4 c Sliced green onions with
-tops 4 Pork chops
In saucepan, bring the water to a boil (may need more water). Stir in rice and boil 20 minutes. In skillet, cook bacon until crisp. Remove bacon and crumble, reserving 2 Tbsp. drippings. Set aside. In bowl, combine eggs and the 2 Tbsp. water. In the skillet, cook eggs in 1 Tbsp. reserved drippings. Add drained rice, bacon, onion and the 3 Tbsp.
soy sauce to eggs; mix well. Turn into a greased 1 1/2 quart casserole. In skillet, brown the chops in 1 Tbsp. drippings. Arrange chops atop rice mixture; brush with additional soy sauce. Savory pork chops, tangy and sweet tomato sauce, fluffy egg fried rice, topped with melty cheese. This Hong Kong baked pork chop rice is the definition of comfort food!
HONG KONG BAKED PORK CHOP RICE - 4-Servings

Pork Chops
- 3 bone-in pork chops
- half a cup of cornstarch
- 1 tbsp of salt
- 1 tsp of black pepper
- 2 eggs
Egg Fried Rice
- 4 bowls of cooked rice (2cups uncooked)
** Best to have rice from the night before
- 3 eggs
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp soy sauce
Tomato Sauce
- 1 onion - sliced or diced
- 2 tomatoes - wedges ~10
- 1 clove of garlic chopped
- 2 tbsp
- 2 tbsp tomato paste (if you don't have tomato paste, use 1/2 cup ketchup - total)
- 2 tbsp of Worcestershire sauce
- 2 tsp of sugar
- 3/4 cup of water
Other ingredients
- 50 g of mozzarella or cheese of your choice
- salt and pepper to taste
Instructions
Score the pork chops so they don't curl during cooking
If pork chops are thick, lightly pound until about 1/2 inch thick
Beat 2 eggs
Combine corn starch, salt and pepper
Dip in corn starch then eggs
Medium-high heat - ~2 minutes each side until golden and crisp
Med heat - cook onions, then garlic few seconds, then ketchup & tomato paste 30 sec, then Worcestershire, sugar, and water
Add tomatoes
Medium heat until tomatoes are just cooked and the sauce thickens
Break up the leftover cold rice
Beat 3 eggs
Medium-high - 3 tbsp oil
Add eggs until ~60-70% cooked. Season with salt
Then add rice and toss for 1-2 minutes
Add 1 tsp soy sauce for extra umami!
Slice pork chops into strips
Lay rice into an oven-safe plate followed by pork chops, sauce, and top off with cheese
Bake at 450F or 230C for 10 minutes or until cheese is melted and rice is heated through.

Hong Kong has been a unique home for culture and food for a long time. The blend of Chinese and British lifestyles has been created because up until 1997 it was a British colony.
Good food is always meaningful and the timing of this video has really brought this home. The day before I made this video Queen Elizabeth II sadly passed away. As head of State for the UK this has been felt all over the world and especially in Hong Kong where she was very well loved and respected. And this adds poignancy to this recipe as it is very much a Hong Kong staple created by this wonderful and unique mix of cultures.
And although I'm pretty sure she never tried this particular dish, I hope she would have liked it and what it symbolises to me.

5-6 thick pork chops
750g cold boiled/steamed rice
5 cloves garlic
1 medium white onion
3 large tomatoes
1 green pepper
250g of cheddar cheese
1 egg for the rice
Marinade
1/2 tsp sugar
1/2 tbs sesame oil
1/2 tbsp light soy sauce
1 egg
Velveting
1/2 tsp bicarbonate of soda/baking powder
1 tsp cornflour/cornstarch
100g of plain flour for dusting
For the sauce
6 tbsp tomato ketchup
300 water
3 tsp sugar
A good pinch of salt and freshly ground black pepper
1/2 tbsp light soy sauce
1tbsp cornflour/cornstarch with a little cold water to thicken the sauce

Baked Pork Chop Rice is a popula dish in Hong Kong. Some of the restaurants or cha chan teng (Hong Kong's local cafes) serve the pork chop in tonkatsu style but in an effort to make this dish healthier, Roland opted for pan-frying instead. Like the restaurants in Hong Kong, Roland cooked a simple fried rice as a bed for the pork chop to rest on, followed by his very delicious tomato based sauce. Finally, this yummy combo is then topped off with a lot of mozzarella cheese and baked to perfection. My tummy is growling as I'm writing this. Haha.

Marinated Pork Chop

4 pcs of pork loin/pork chop (total weight 330g)
2 pcs of lightly smashed garlic
half a thumb size of lightly smashed young ginger
4 tablespoons of light soy sauce
3 tablespoons of Chinese white rice wine
3 tablespoons of cornflour
Fried rice
----
8 beaten eggs
6 cups of cooked rice (from 3 cups of uncooked rice)
2 teaspoons of chicken stock powder
2 teaspoons of salt
2 tablespoons light soy sauce
A few dashes of white pepper or black pepper
Tomato based sauce

1 big red onion - sliced
2 shallots - sliced
2 cloves of garlic - chopped
3 thinly sliced fresh button mushrooms
1 whole tomato - cut into wedges
2 tablespoons of tomato paste
1 cup of water
1/2 teaspoon of sugar
1/2 teaspoon of salt
Some cornstarch solution

3/4 cup of mozzarella cheese
Bake the dish at 180C for 10 mins, followed by 200C for 5 mins - total 15 mins bake time.

If you guys are fans of DTF-styled pork chop with fried rice, this is the perfect recipe for it. The well-seasoned pork chops are deep fried golden brown, the bits of batter at the edge crisp up real well, and are just great when you bite in!
The recipe uses the common seasoning that are widely used for Chinese cooking, and to top it off we added ginger juice to improve the flavour. It’s a great match with a simple egg fried rice topped with chopped spring onions. A simple and fast to make dish suitable for the whole family to enjoy!
