How To make Polish Noodles
1/4 c Sweet butter
8 oz Sour cream*
1 lb Ham, cubed
16 oz Ripened tomatoes, chopped
2 c Elbow macaroni**
1 oz Maggi Seasoning OR
-1 tb Soy sauce 1/2 ts Salt, optional
1/2 ts Pepper
2 Green onions, chopped
*light if desired (don't use non-fat) **cooked al Dente (be careful not to overcook) Brown butter in Dutch oven. Add remaining ingredients except onions, salt (if using) and pepper. Mix well. Simmer uncovered for 10 minutes. Add onions and cook 5 minutes more. Melinda's notes: I got this from an old Polish acquaintance long ago. I don't know how original Polish it is since it uses Maggi Seasoning, which I think is German, but we like it. Maggi Seasoning comes in a square-ish brown bottle and can be purchased in the gourmet section of your supermarket. I always omit the salt. The original recipe called for 4 oz. sour cream, but I like it with 8 oz. I usually use the light sour cream, but the non-fat doesn't do well, it seems to just dissolve and become tasteless. HOMEMADE HALUSKI NOODLES (CABBAGE, NOODLES & ALL) COAL REGION COMFORT FOOD
Haluski is a Coal Region favorite and the ultimate cold weather comfort food. While you can cheat with store bought egg noodles, I'm going to show you how to make homemade haluski noodles, from scratch. They're easy, just take some time, about an hour, to prepare. But the flavor is off the charts good!
HALUSKI NOODLES
3 eggs
3 tbs milk
1 tsp salt
2-3 C flour
Beat eggs, salt, and milk.
Add 2 C of flour to start working into a stiff dough.
Add more if needed to get the right stiffness for rolling out.
Let rest 5 minutes.
Roll out to about 1/4 inch thickness and cut into patches or noodles.
Put in boiling water and boil until tender, about 20 minutes.
Drain noodles and let cool a few minutes.
Then add to the cabbage mixture and finish frying.
HALISKI CABBAGE PART
1/2 a head large cabbage, shredded
1 medium onion diced
2 cloves of garlic minced
1 stick of butter
garlic powder if more garlic desired
pepper
In a large pan while pot for boiling noodles comes to boil, melt stick of butter, and add the cabbage, onion and garlic.
Place lid on and on low heat, let steam while making the noodles, stirring occasionally.
When noodles are ready, add to the cabbage mixture and fry until caramelized.
Cabbage should be tender first.
Serve as a meal or with your favorite meats!

Happy Vlogmas! My Mom's family is Polish and we always ate homemade Polish Pierogies on Christmas Eve. She would make more than a hundred of them in the weeks before Christmas and we would help roll out the dough and stuff them. It was a big project but it was for a special occasion. Much of the rest of the year, when we felt like eating homemade pierogies, but didn't feel like doing all of the work to make them, we would eat this instead. The taste is the same and it's super quick and easy to make.

Polish Noodles
Hello friends! This is a basic Polish noodle recipe. I've listed the amounts of the ingredients below, feel free to change it up, get creative and make it to your taste. I would love to see in the comments how you adjusted it to make it your own! I hope you enjoy.
1 lb bacon (you can also use kielbasa)
Half of a yellow onion
2 garlic cloves
Black pepper to taste
Teaspoon of parsley
1 cup of spinach (you can also use cabbage)
1/2 cup of sour cream
2 cups of cottage cheese
1 lb of cooked egg noodles
Salt to taste
