How To make Pita Pizza Bites
2 Pita breads (6 inch)
2 c Sliced fresh mushrooms
- OR - 4 oz Mushroom stems and pieces,
- drained (1 can) 1 sm Red onion, thinly sliced
1/4 c Chopped green bell pepper
2 tb Chopped fresh basil leaves
- OR - 2 ts Dried basil leaves
1 c Finely shredded Mozzarella
- cheese (4 ounces) 1 tb Grated Parmesan cheese
Heat oven to 425 degrees. Split each pita bread in half around edge to make 4 rounds. Place rounds, cut-sides up on ungreased cookie sheet. Place mushrooms on bread rounds. Top with onion and bell pepper. Sprinkle with basil and cheeses. Bake 8 to 10 minutes or until cheese is melted. Cut each round into 8 pieces. Makes 32 appetizers. Preparation time: 10 minutes Baking time: 8 to 10 minutes

Breakfast Pizza:
1 pocketless-pita or naan bread
A handful of fresh baby spinach leaves
3-4 tablespoons pizza sauce
Shredded mozzarella cheese
1-2 tablespoons crumbled feta cheese
2 kalamata olives, pitted and sliced
Sliced bell peppers
1 egg
Dried oregano
Preheat the oven to 525 °F, 275 °C.
Place the pita bread on a baking tray lined with parchment paper.
Spread the pizza sauce over the pita.
Top with spinach, mozzarella, and feta cheese. Leave some room in the center for the egg.
Sprinkle the kalamata olives and the bell peppers on top.
Crack the egg into a bowl then transfer to the center of the pita.
Sprinkle the egg with some salt and oregano.
Pace the baking tray onto the center rack of the oven and bake for 5 minutes.
Turn the broiler element on and broil for 2 minutes or until the egg white is set and the center is still runny.
Enjoy!
The Classic Pizza:
1 pocketless-pita or naan bread
3-4 tablespoons pizza sauce
Shredded mozzarella cheese
Your favorite toppings: olives, peppers, onions, mushrooms, etc.)
Preheat the oven to 525 °F, 275 °C.
Place the pita bread on a baking tray lined with parchment paper and spread the pizza sauce on top.
Cover the sauce with mozzarella cheese and your favorite toppings.
Bake on the center rack of the oven for 5 minutes then Broil for 2 minutes or until the cheese is melted and bubbly. Enjoy!
Barbeque Chicken Pizza:
3-4 tablespoons barbeque sauce
Leftover roasted chicken thinly sliced or chopped.
Shredded mozzarella cheese
Feta cheese or blue cheese, crumbled
Your favorite toppings: olives, bell peppers, jalapeno slices, etc.
Preheat the oven to 525 °F, 275 °C.
Place the pita bread on a baking tray lined with parchment paper.
Spread the barbeque sauce on top of the pita.
Top with chicken, cheese, and the toppings.
Bake on the center rack for 5 minutes then Broil for 2 minutes or until the cheese is melted and bubbly. Enjoy!
For the Pizza Sauce:
15 ounce can of crushed tomatoes
1.5 oz. tomato paste (put the rest in an airtight container and freeze for another recipe)
½ teaspoon dried oregano
1/8 teaspoon (or more) crushed red pepper flakes
1 and ½ teaspoons sugar
1 teaspoon dried basil
Combine all of the ingredients in a blender and blend until smooth.

Ingredients for dough:
Flour 4 cups
Yeast 1 ½ tbsp
Salt 1 tsp
Sugar 1 tbsp
Oregano 1 tbsp
Milk 1/2 cup
Water as required
Ingredients for chicken marination:
Chicken breast 2 fillets
Salt to taste
Black pepper 1 tsp
Lemon juice 1 tbsp
Mustard paste 1 tbsp
Oil 1 tbsp
Ingredients for cheese sauce:
Oil 1 tbsp
Flour 2 tbsp
Butter 1 ½ tbsp
Mozzarella cheese 1 cup
White pepper powder 1/4 tsp
Salt to taste
Assembling:
Pizza sauce as required
Onion (julienne) as required
Tomatoes (julienne) as required
Capsicum (julienne) as required
Olives (sliced) as required
Sweet corns as required
Ice burg (shredded) as required
Directions for dough:
In a bowl add flour, yeast, oregano, sugar, salt, oil and milk.
Gradually add water and knead a smooth dough. Cover and let it proof for 30 minutes.
Make small balls of 105 grams; roll out each in round shape.
Cook on a medium pan on low flame each side for 40 seconds or 1 minute.
Then again cook on a grill pan, each side for at least a minute and then cut them from center and make pocket.
Directions for chicken filling:
Take chicken breast and cut it into half to make thin slices.
Marinate your chicken with salt, pepper, lemon juice, mustard paste and oil for 15 minutes.
Grease your grill pan and cook your chicken fillet each side for 2 to 3 minutes.
Then cut your chicken fillets into strips.
Directions for cheese sauce:
Pour oil in a pan, then add butter and let it melt.
Add flour and cook it on medium low flame for a minute.
Then add milk in it and give it a good mix.
Add white pepper, salt and cheese. Cook until cheese melts.
Assembling:
Spread pizza sauce in pocket then fill it with ice burg, chicken, capsicum, tomatoes and onion.
Sprinkle olives, sweet corn on top and lastly drizzle cheese sauce.
Your tasty pita pockets are ready to serve.
Preparation time: 30 minutes
Cooking time: 30 minutes
Serving: 4-5

For pita dough
250ml + 130ml warm water
1 tsp sugar
7g yeast
4 cups flour (500g approximately)
2 tsp salt
3 tbsp oil
For salad
Chopped red onion and cucumber
