How To make Pirate Steak
1 cn Beer (12 oz.)
1/2 c Chili sauce
1/4 c Salad oil
2 tb Soy sauce
1 tb Dijon-style mustard
1/2 ts Red pepper sauce
1/8 ts Liquid smoke
1/2 c Coarsely chopped onion
2 cl Garlic, crushed
3 lb Beef sirloin steak, 1 1/2 -
- 2 inches thick 1 ts Salt
1/2 ts Pepper
Mix all ingredients except steak, salt & pepper; simmer 30 minutes. Brush meat with sauce. Place steak on grill 4 inches from medium coals. Cook 15 minutes on each side, basting frequently wth sauce. Season with salt and pepper after turning and after removing from grill. Serve with remaining sauce.

How to make PIRATE’S GOLD MARINATED TOP SIRLOIN STEAK – PIT BARREL COOKER
We marinated a 1.5 lb. Top Sirloin Steak in 1 cup of Pirate’s Gold Marinade for 1 hour. Hooked and hung in the Pit Barrel Cooker and cooked until an internal temperature of 145 degrees (about 1 hour). Removed the Sirloin, wrapped in foil after adding about 6 oz. of beer (Brisket style) and placed back on the Pit Barrel Cooker grill grate until the Sirloin reached a temperature of 200 degrees (about 1 more hour). Removed the Sirloin leaving it in the foil, wrapped with a heavy towel and let rest for 30 minutes….The meat was fall apart tender so we made impromptu sirloin tacos with flour tortillas, shredded jack and cheddar cheese and hot sauce!!! DELICIOUS!!

INGREDIENTS
2 Ribeye or New York Strip steaks (go for 1 1/2 inches thick)
avocado oil
salt
GARLIC HERB BUTTER
2 tablespoons unsalted butter, softened
1/2 tablespoon chopped fresh parsley
1/2 teaspoon minced garlic
1/4 teaspoon Worcestershire sauce
1/8 teaspoon salt
INSTRUCTIONS
Temper the steak by letting it sit at room temperature for 20-30 minutes.
Prepare the garlic butter by mixing together the softened butter, parsley, garlic, Worcestershire, and salt.
Pat steaks dry with paper towels, then rub a little bit of oil over the steak and bottom of air fryer basket. Liberally season steaks with salt and pepper.
Preheat air fryer to 400°F/200°C for 10 minutes.
Once preheated, place steaks in air fryer.
Cook for 10-16 minutes, flipping and rotating halfway through.
Cooking time will vary depending on your air fryer and thickness of steaks. Internal temperature of steak should be 130°-135°F/54.4-57.2°C for medium-rare or 140°-145°F/60-62.8°C for medium.
Remove steak from air fryer and place on baking rack. Top with garlic butter and allow to rest for 1/2 the time it took to cook.
Alternatively, turn off air fryer, leaving steaks in it, top steaks with butter, close air fryer and let rest for half the amount of time it took to cook.
