2 c Sugar 1 c Brown sugar 1 cn (8 1/2-ounce) crushed Pineapple and juice 1/2 c Milk 1 T Corn syrup 1/4 t Salt 2 T Butter 24 lg Marshmallows 1 t Vanilla 1 c Chopped pecans or walnuts Combine sugars, pineapple and juice, milk, corn syrup, salt, and butter in a 2-quart saucepan. Cook to 238 degrees F., stirring occasionally. Remove from heat and add marshmallows and vanilla. Mix together to melt marshmallow, then beat until mixture becomes heavy and creamy. Add nuts. Spread in a buttered 8-inch square pan. Cut into squares when cool and firm. Makes about 49 pieces.

PINEAPPLE FUDGE
Ingredients
1 cup grated pineapple 500 ml + 1 teaspoon milk 2 tablespoons sugar Few saffron threads + for garnishing ½ teaspoon green cardamom powder Chopped pineapple for garnishing
Method
1. Heat 500 ml milk in a non-stick pan and boil till it reduces. 2. Heat sugar in another non-stick pan. Add grated pineapple, mix well and cook till thick. 3. Take saffron in a bowl and add 1 teaspoon milk. Set aside. 4. Add cardamom powder to the pineapple and mix well. Add saffron milk and mix well. 5. Add reduced milk and mix well. Switch off heat. Transfer the mixture into a glass dish and cool. 6. Garnish with saffron strands and chopped pineapple and serve at room temperature or chilled.
