How To make Pine Nut Dressing
12 ounces ground beef
4 ounces onion -- finely chopped
1/2 teaspoon concentrated chicken base
1/4 teaspoon garlic powder
1/2 teaspoon coarsely ground pepper
6 cups orzo
1/4 cup pine nuts
Saute beef, onion, chicken base, garlic powder, pepper and pine nuts until onions are tender. Add mixture to orzo.

Ready to elevate your salad game? Grill thick slices of romaine in a cast iron pan and drizzle with homemade pine nut vinaigrette for a crowd-pleasing side.
Ingredients:
Pine Nut Vinaigrette
½ cup (plus 2 tablespoons) pine nuts, toasted
3 tablespoons apple cider vinegar
1 tablespoon dijon mustard
2 teaspoons honey
¼ cup olive oil
2 tablespoons parmesan cheese, grated (plus more for garnish)
¼ teaspoon salt
¼ teaspoon pepper
Grilled Romaine
3 romaine lettuce hearts, halved lengthwise
1 tablespoon olive oil
salt
Directions:
Pine Nut Vinaigrette
Combine all ingredients except olive oil in a food processor until well blended, 1 minute.
With the food processor running, pour in olive oil in steady stream until the vinaigrette reaches desired consistency.
Grilled Romaine
Preheat grill pan over medium-high heat, 5 minutes.
Brush all sides of the lettuce with olive oil. Season lightly with salt.
Grill lettuce in batches, 1-2 minutes per side. Remove from heat. Drizzle vinaigrette and garnish with remaining pine nuts and parmesan cheese. Serve immediately.

Soak raw pine nuts overnight in water.
The following day, remove the soaking water then blend the pine nuts with a bit of water, one or two cloves of garlic and a pinch of sea salt.
This creamy salad dressing is perfect with vegan noodles made of cucumbers or zucchinis.
I love olive oil, or liquid gold, but sometimes it is nice to add a bit of variety :-)

Spinach Pine Nut & Pepita Salad Dressing(Vegan, Oil-Free)
I came up with this recipe a couple years ago. I love the vibrant green color and the delicious flavor of this dressing. Enjoy!
Note: it is not necessary to soak the pine nuts or pepitas, you can add them without soaking. You can also use unsweetened non-dairy milk instead of the water. If you still consume oils, you can use 1 Tb EVOO and 1-2 Tb water or milk, to give it a richer flavor.
1 scallion
1/2 cup fresh spinach
1/2 cup fresh cilantro
1-2 garlic cloves
1 Tb pine nuts (soaked 2-4 hours)
1 Tb pepitas-pumpkin seeds (soaked for 2-4 hours)
2 Tb water if using a mini-blender 3 Tb water if using a regular size blender
1 Tb lemon juice
1/2 tsp red wine vinegar
1/4 tsp salt or to taste
black pepper
