I am making the first meal of the new year and it's gonna be comforting. Today I am making Tex-Mex-style ground beef enchiladas topped with an egg and homemade salsa. The enchilada sauce is a savory chili gravy red sauce that is perfect for baked enchiladas. I grew up with these beefy cheesy enchiladas and still make them weekly.

INGREDIENTS
1 lb lean ground meat of choice
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground cumin (optional)
1 tsp salt
pepper to taste
15 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack or cheddar cheese
ENCHILADA RED SAUCE INGREDIENTS
3 to 4 Tbsp oil
1/4 cup all-purpose flour
2 to 3 Tbsp light chili powder
1 Tbsp beef or chicken bouillon
1/2 tsp onion powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups water

- 1 to 2 Lbs Ground Beef
- Corn or Flour Tortillas
- 1 Small Can of Rotel (Optional)
- 1 8oz Package Shredded Mexican Cheese
- Sazon (Optional)
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Black Pepper
- 1 Tbsp Seasoned Salt or to Taste
TOPPINGS:
- Diced Tomatoes
- Diced Red Onions
- Scallions

RED SAUCE (Feel free to use the canned store bought sauce!):
- 2 Tbsp All Purpose Flour
- 1 Heaping Tbsp Chili Powder
- 1 Tsp Smoked Paprika
- 1/4 Tsp Black Pepper
- 1 Tbsp Onion Powder
- 1 Tbsp Garlic Powder
- 1 Tbsp Ground Cumin
- 1 to 2 Tbsp Tomato Paste
- 2 Cups Chicken Broth
- 2 Tbsp Olive Oil

SUPER EASY BEEF ENCHILADAS
In this video I’ll show you how to make a super easy homemade beef enchilada dish. Oil seasoned corn tortillas filled with seasoned ground beef and onions, covered in a rich enchilada sauce, topped with plenty of cheddar cheese and garnished with diced onions and fresh cilantro. Serve this great tasty dish in less than 30 minutes. Enjoy!!!
Shopping List:
4 Corn tortillas
½ Lb. ground chuck
2 tbls. cooking oil for the meat
¼ cup cooking oil for the tortillas
1 cup enchilada sauce
1 cup shredded cheddar cheese or 4 blend Mexican cheese
¼ cup diced white onion
Cilantro for garnish
Kosher salt and ground black pepper to taste
Homemade Taco Seasoning Recipe: or just get the pkg kind
1 tsp. chili powder
1 tsp, ground cumin
1 tsp. Kosher salt
1 tsp. ground black pepper
½ tsp. paprika
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. red pepper flakes
¼ tsp. oregano
Homemade Enchilada Sauce Recipe:
Directions:
Pre-heat your oven to 425 degrees
Heat a skillet to medium high then add the 2 tbls. oil.
Add the ground chuck, break up and cook until browned.
About halfway through cooking the meat add the diced onions and cook until softened.
Add the taco seasoning and stir well to combine.
Drain the excess grease from the skillet, bowl up the meat and onions and set aside.
In a skillet add the ¼ cup cooking oil and heat to 350 degrees.
Using tongs dip the tortillas in the oil for no more than 2-3 seconds then remove.
Spoon a small layer of heated enchilada sauce across the bottom of a baking dish.
Fill each tortilla with a portion of the meat/onion mixture then fold, tuck and roll the tortilla and place into the baking dish.
Cover all of the tortillas with the sauce and top with the cheese.
Place into the oven for about 3-4 minutes until the sauce is bubbling and the cheese has melted.
Garnish with a sprinkle of diced onions and cilantro then serve immediately.

Ground Beef Enchiladas
1 1/2 lbs Ground Beef
1 Tbsp Avocado Oil
1 Medium Onion- diced
1 Jalapeno Pepper - minced
3 Cloves Garlic - minced
Salt & Pepper to taste
2 C Enchilada Sauce (easy recipe to follow)
2 C Cheddar Cheese/Monterey Jack - Shredded
Corn or Flour Tortillas (approx 15)
Easy Enchilada Sauce
3 Tbsp Avocado or Canola Oil
3 Tbsp Flour
4 Tbsp Chili Powder
1/2 tsp Garlic
1 tsp Cumin
1/2 tsp Oregano
1/2 tsp Salt
2 1/4 C Chicken Broth
In a small sauce pot heat oil, stir in flour and cook for 2 - 3 minutes. Add chili powder, garlic, cumin,
oregano & salt cook for a minute or two to roast the spices. Gtadually add chicken broth stiring until thickened.
Heat oil in a large skillet, add onions, jalapeno & garlic. Cook until onions start to turn translucent. Add ground beef cooking until no longer pink. Add 2 cups of enchilada sauce. Remove from heat.
Pour a few tablespoons of enchilada sauce to the bottom of a 9 x 13 baking dish.
If using corn tortillas heat in the microwave for 1 minute to soften the shells.
Place shell on a flat surface. Place a ground beef mixture and cheese into shell, roll tightly and place seam side down into baking dish. When finished top with additional enchilada sauce and cover with cheese.
Bake @ 350 for 20 minutes.
Serve with avocado, sour cream & cilantro.

These BEEF ENCHILADAS, are amazing, very TEX-MEX, just like my mom taught me, I have made some adjustments according to my taste, and I think they are super delicious, easy and will have you begging for more. One good thing about these BEEF ENCHILADAS, is you can make them with just cheese or you can make them with beef (both are delicious) the sauce is the one that shines in this recipe, and it is made to perfection. you can use mild cheddar cheese or American cheese which is my favorite, this recipe can make 8-10 enchiladas just depends how full you stuff them.
INGREDIENTS
1 LB. ground beef 80/20 (drained)
2 & 1/2 tbsp melted butter or oil
2 Tbls flour
2 Tbsp chili powder (I made my own, but you can use Gebhardts or other) look for Gebhardts
1 Tbsp paprika
3 C. Chicken broth
1 tsp onion powder
2 tsp garlic powder
1 tsp cumin
1/2 tsp sugar
1 tsp oregano
1 tsp chicken bouillon
pepper (to your liking)
salt (to your liking) CAREFUL DON'T OVER DO IT
8 corn tortillas
veg oil for frying tortillas
• pat dry tortillas of oil before rolling

Delicious Chipotle Beef Enchiladas | Perfect Family Recipe | Kravings
I love me some Enchiladas. In this simple recipe, a Chipotle sauce is made with canned Chipotle in Adobo sauce. The same sauce is used to flavor ground Beef that is stuffed in a Tortilla and rolled. These are covered with a cheesy sauce aka a Bechamel and Chipotle sauce. This is a great simple recipe to make for a weeknight dinner. You can also make these ahead, freeze and then bake.
Here are the ingredients and steps to make this recipe!
Chipotle Beef Enchiladas
Chipotle sauce
186 ml – 6.55 fl oz canned Chipotle in Adobo sauce
2 cups diced Tomatoes
4 cloves Garlic
1/2 cup Onion
186 ml – 6.55 fl oz Water
1 cup finely diced Onion
Filling
1 cup diced Onions
1 lb ground Beef
1 tsp Cumin powder
Salt & Pepper to taste
1 cup diced Mushrooms
4 tsps prepared Chipotle sauce
Cheese sauce
4 tbsps Butter
2 tbsps Flour
1.5 cups Milk
1 cup Cheese
Salt
Tortillas
12 Corn Tortillas
Extras
Refried beans
Cheese
Prepare the sauce by blending all the sauce ingredients together
Heat some oil in a pan and add the onions and allow to sweat
Add the ground beef, cumin, salt & pepper
Add the mushrooms and allow to cook
Add the chipotle sauce and mix well, remove and allow to cool
Prepare the cheese sauce in the same pan
Melt the butter and once it’s melted, add the flour and mixed it in
Add the milk in slowly and mix
Add the cheese, allow to melt and mix
Add salt
Heat the tortillas, add some of the refried beans, add ground beef, cheese and roll
Lay all the filled tortillas in a baking dish
Cover with the cheese sauce, the rest of the chipotle sauce and cover with shredded cheese
Bake in a 350 degree oven for 20 - 30 mins till the cheese is melted
