How To make Penne with Tomato, Black Olive and Feta
1 lb Penne or Fusilli
1 tb Olive Oil
1 t Garlic, minced
4 Tomatoes, large, wedges
1/3 c Black Olives, halved
1/2 c Feta Cheese, crumbled
1/2 c Parsley, fresh, chopped
2 tb Basil, fresh, chopped
1/4 c Parmesan cheese, grated
* 2 teaspoons of dried basil can be used instead of the fresh stuff. In a large pot of boiling water, cook pasta until al dente (tender but firm). Drain and return to pot to keep warm. Meanwhile, in a large nonstick frying pan, heat oil over medium heat, stir in garlic. Add tomatoes and cook, stirring, for 3 minutes or until heated through. Transfer to pot with drained pasta, add olives, feta cheese, parsley and basil. Toss gently to mix. Sprinkle each serving with freshly grated Parmesan cheese. Serves 4. From The Gazette, 91/03/06.

Spaghetti with Tomatoes, Black Olives, Garlic, and Feta Cheese | Food & Wine Recipes
Here's an ideal summer pasta with fresh tomatoes as the main attraction. Feta complements the tomatoes beautifully, and the heat of the pasta and hot garlic oil make the cheese meltingly soft. The saltiness of the olives and feta cheese and the acidity of the tomatoes make a refreshingly fruity red wine such as a Beaujolais-Villages the perfect thing to serve with this dish.
Ingredients
1 1/2 pounds tomatoes (about 3), seeded and cut into 1/2-inch pieces
1/2 cup Kalamata or other black olives, pitted
1/4 pound feta cheese, crumbled
3 tablespoons drained capers
3 tablespoons chopped flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
3/4 pound spaghetti
6 tablespoons olive oil
3 cloves garlic, minced

Ingredients:
10oz (280g) Pasta of your choice
8oz (225g) Feta cheese
600g (21oz) Cherry tomatoes or more
3-4 Garlic cloves
1/4 cup (60ml) Olive oil
Salt to taste
Black pepper to taste
1 teaspoon Oregano
1/4 teaspoon Red chili flakes (optional)
Fresh basil, chopped
Directions:
1. Preheat oven to 400F (200C).
2. In a large baking dish or in oven proof skillet place cherry tomatoes, garlic, season with salt, pepper, oregano, red chili flaked. Pour in 1/4 cup of olive oil and mix.
3. In the middle of the dish place a block of feta cheese. Season the feta cheese with salt, pepper, oregano and drizzle 1 tablespoon of olive oil.
4. Bake for 35 minutes.
5. Meanwhile bring a large pot of salt water to a boil.
6. When water is boiling, add the pasta and cook according to package instructions. Drain and set aside.
7. Take the baking dish from the oven and stir/mash all together until well combined. Add the boiled pasta, chopped basil and toss until combined.
8. Serve and enjoy!
