1/4 lb Butter, softened 1 18-oz jar of peanut butter 1 lb Confectioner's sugar 1 pk Semi-sweet chocolate chips 1. Mix together everything except the chocolate chips. 2. Shape into eggs. 3. Let dry overnight. 4. Melt Chocolate chips in a double boiler and dip shaped eggs into melted chocolate.

I found this recipe in a little recipe book from Taste of Home magazine. These are really good!
1/2 cup butter 2 1/3 cups confectioner's sugar (powdered sugar) 1 cup graham cracker crumbs (or some other finely crushed slightly sweet biscuit if you don't have the graham crackers where you live) 1/2 cup creamy peanut butter 1/2 tsp vanilla extract 1 1/2 cups dark (or semi-sweet) chocolate chips 2 tbsp shortening Sprinkles for decorating.
In a large bowl, cream butter; gradually add the confectioner's sugar, cracker crumbs, peanut butter and vanilla. Shape into 16 eggs (I made 30 smaller ones) place on waxed paper-lined baking sheet. Refrigerate for 30 minutes or until firm.
In a microwave, melt the chocolate chips and shortening, stir until smooth. Dip the eggs in chocolate, allow excess to drip off. Decorate with sprinkles; return the eggs to waxed paper. Chill until set. Store in an airtight in the refrigerator.
A great homemade treat for Easter. Super easy and delicious.
Chocolate Peanut Butter Easter Eggs
1 (16 oz.) package confectioner's sugar 1 cup creamy peanut butter ¼ cup softened butter 1-2 Tablespoons milk (I used 3 Tablespoons) 8 (1 ounce) square semi-sweet chocolate 1 Tablespoon shortening
In a mixing bowl, combine confectioner's sugar, peanut butter, butter and milk (if needed for moisture) until blended. Shape mixture into two ½ pound eggs or make 4-6 smaller eggs. Freeze eggs for 1 hour on a cookie sheet lined with wax paper.
Using a double boiler, melt the chocolate and shortening until smooth and creamy.
Using a fork dip the eggs into the chocolate covering completely. You can spoon the chocolate over the egg to help with the process and get the chocolate evenly distributed over the eggs. Place back on the wax paper lined cookie sheet. At this point, if you want to use sprinkles to decorate, sprinkle the eggs. Place in the refrigerator to let the chocolate harden. When the eggs are cooled and set, decorate the eggs with names, bunnies or flowers to look like Easter eggs, if desired.

Homemade Peanut Butter Eggs
These homemade peanut butter eggs are an easy and delicious Easter treat! In my humble opinion they taste MUCH better than the Reese's Eggs you'll find in the market and they're a fun activity to do with kids at home! I love decorating easter eggs but will take the edible version any day of the week!
