BEST EVER BANANA NUT MUFFINS
Ingredients
For the muffins
* 3 large ripe bananas
* 3/4 cup white sugar
* 1 large egg
* 1/3 cup vegetable oil
* 1 1/2 cups all purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg (optional)
* 3/4 cups chopped walnuts
For the topping
* 3/4 cups chopped walnuts
* 2 tablespoons brown sugar
* 1 tablespoon melted butter
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
* Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
* Add the vegetable oil and mix well.
* Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
* Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
* In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
* Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
* Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
* Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

General Recipe Tips:
✔ Try not to over mix the batter for best results.
✔ Any type of cooking oil can be used for this recipe. Canola and vegetable oil will give a neutral taste.
✔ Melted coconut oil or butter can be substituted for the oil in this recipe. Melted butter will result in a muffin that stales within just one day.
✔ Up to 1 cup (113 grams of chopped or whole peanuts can be folded into the batter.
✔ Do not use more than 1 1/2 cups (360g) of chocolate as it will change the texture of the muffins and they will not bake properly.
✔ Fat-free, 2%, whole milk or buttermilk can be all be chosen for this recipe. Whole milk will give the richest flavor, but fat-free tastes excellent! For a tang, try buttermilk.
✔ You can use soy, almond or other milk substitutes for this recipe.
✔ Bake until center reads between 200-210F (93-99C.) The toothpick method only tells you a muffin is done, but it doesn’t tell you it’s overly done. Over-baking will lead to a dry muffin.
✔ If using a darker baking pan than seen in the video, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.
✔ Recipes were created by weighing ingredients. The recipe can be subject to change. Be sure to check the website for any alterations.

PEANUT BUTTER MUFFINS
Peanut butter muffins with a chocolate struesel
Struesel mix:
1/4 cup flour
1/4 cup brown sugar
1 1/2 tbsp cold butter, cubed
2 tbsp chopped chocolate chips
Muffin mixture:
1 cup flour
1/2 cup packed brown sugar
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup milk
1/4 cup peanut butter (I use creamy)
1 egg
2 tbsp softened butter
1) In a stand mixer with a whisk attachment, combine muffin dry ingredients. Flour, brown sugar, baking soda, baking powder and salt.
2) Add in wet ingredients, PB, egg, and butter. Mix on 4 (low-medium) for about 3 mins until batter is smooth.
3) Distribute into 6 liners evenly. (I use an ice cream scoop)
4) Make your struesel. Using a pastry blender combine the cold, cubed butter with the flour and brown sugar.
5) Add chopped chocolate chips.
6) Generously sprinkle struesel on top of each muffin, there will be left over.
7) Bake at 350 for 15-20 mins or until toothpick comes out clean.
8) Let cool for a couple mins and remove from pan and put onto a wire cooling rack.
9) ENJOY!!!
