• ingredients:
- 1 pack boiled pasta
- 6-8 eggs
- 1 1/2 cups milk
- 1/2 a cup feta brine ( if you don’t have sub with yogurt or milk)
- 2 cups feta crumbs
- black pepper
• instructions:
- into a large bowl add the eggs and whisk
- then add the milk the feta brine
- into a casserole add the boiled pasta, the feta cheese, the black pepper and mix
- then add the egg/milk mixture over the pasta and mix
- bake into a preheated oven at 400F (200C) for about 30-40’ mins or until is golden brown
-when is ready let it cook for about 30’ mins, cut and enjoy

Pastitsio (Greek Baked Pasta) | Greek Pastitsio | Pastitsio Recipe | Pastiçe |
Greek pastitsio (Pastichio) – a layer of pasta with cheese, layer of delicious meat mixture with tomato sauce and covered with third layer of rich béchamel sauce. This Greek Baked Pasta
(Pastitsio) recipe is also kown as Greek Lasagna. If you like to eat comfort food, this classic Greek lasagna (pastitsio) recipe is definitely worth a try.
Ingredients:
For the ground meat
- 2 tbs olive oil
- 2 red onions, finely chopped
- 1 tbs granulated sugar
- 1 tbs fresh thyme
- 1 clove(s) of garlic, finely chopped
- 2 tbs tomato paste
- 750 g ground beef
- 100 ml red wine
- 400 g canned tomatoes
- 1 tsp cinnamon
- 2 beef bouillon cubes
- 2 bay leaves
For the béchamel sauce
- 100 g butter
- 100 g all-purpose flour
- 1 litre milk
- salt
- pepper
- 1/2 tsp nutmeg
- 1 cup emmental cheese, grated
- 3 eggs
For the pasta
- 300 g bucatini pasta, cooked
- 2 eggs
- 200 g feta cheese
- 3 tbs parsley, finely chopped
- 30 ml olive oil
- 2 tbs fresh thyme, finely chopped
To assemble
50 g emmental cheese, grated
Instructions:
For the ground meat
Place a pan over high heat.
Add 2 tablespoons of olive oil, the onions, the sugar and thyme.
Sauté for 3-4 minutes, until the onions caramelise.
Add the garlic and continue to sauté.
Add the tomato paste and sauté for at least 2 minutes.
Add the ground meat and cook until brown for 4-5 minutes.
Add the wine and let the alcohol evaporate.
Add the canned tomatoes, cinnamon, bouillon cubes and bay leaves.
Turn the heat down to low and simmer for 10-20 minutes, until the sauce reduces and the ground meat is cooked.
When ready, remove from heat. Remove the bay leaves.
For the béchamel sauce
Heat the butter in a pot over medium heat. Add the flour as soon as it mealts (do not let the butter burn). Beat with a hand whisk and sauté the flour for a few minutes.
Add the milk, in small batches, whisking continuously so that no lumps form in the mixture.
Keep on mixing it until the béchamel sauce starts to become creamy.
Keep on whisking continuously to avoid the sauce to stick on the pan.
When ready, remove from heat and add salt, pepper, nutmeg the grated emmental and the three eggs and whisk to incorporate.
Set aside until needed.
For the pasta
Add the pasta to a pot full of salted water. Boil 1-2 minutes less than the instructions on the box. They need to be al dente because they will cook further in the oven, so do not overcook.
Brush a baking pan with olive oil.
When the pasta is ready, drain and spread in the baking pan.
Add the 2 eggs, thyme, parsley and crumbled feta cheese.
Season to taste and set aside until needed.
Preheat oven to 180* C (350* F) Fan.
Bring back the baking pan containing the meat mixture.
To the ground meat, add a ladleful of the béchamel sauce and mix until completely incorporated. The béchamel sauce will make the ground meat mixture hold together better when serving.
Spread the ground meat mixture over the pasta in the baking pan.
Pour the remaining béchamel sauce over the ground meat.
Last, sprinkle the reserved grated emmental over the top.
Bake for 40 minutes or until the béchamel turns golden brown.

Μακαρονόπιτα με φέτα & φύλλο κρούστας, μια εύκολη συνταγή από την MargoTzo | Makaronopita, Pasta pie
Μακαρονόπιτα συνταγή,
Θα χρειαστούμε
1 πακετο μακαρόνια Νο 2
300 γρ φέτα ( θρυμματισμένη )
80 γρ μοτσαρέλα τριμμένη
160 γρ βουτηρο
4 αυγα
15 γρ ελαιόλαδο
Μοσχοκάρυδο
Αλάτι και πιπέρι
1 πακέτο φύλλα μπακλαβά 10-12 φυλλα.
Εκτέλεση συνταγής ;
Σε μια κατσαρόλα βράζουμε τα μακαρόνια όσα λεπτά λέει η συσκευασία και τα σουρωνουμε.
Τα τοποθετούμε και πάλι στην κατσαρόλα και βάζουμε τα 100 γρ βούτυρο , το υπόλοιπο το λιώνουμε και προσθέτουμε το ελαιόλαδο μεσα σε αυτό.
Με αυτό το μείγμα θα αλείψουμε τα φύλλα μας.
Αφού λιώσει το βούτυρο σβήνουμε το μάτι και προσθέτουμε την μοτσαρέλα και το μοσχοκάρυδο και ανακατεύουμε καλά.
Σπάμε τα αυγά τα χτυπάμε καλά και τα προσθέτουμε και αυτό στην κατσαρόλα μας.
Τέλος προσθέτουμε την θρυμματισμένη φέτα πιπέρι και αλάτι.
Ανακατεύουμε καλά και το μείγμα για την πίτα μας είναι έτοιμο.
Περνούμε ένα ταψί ,το βουτηρωνουμε και αρχίζουμε να βάζουμε τα μισά φύλλα μας βουτηρωνοντας τα ένα ένα
Στην συνέχεια προσθέτουμε το μείγμα μας με τα μακαρόνια και από πάνω βάζουμε τα υπόλοιπα φύλλα, ένα ένα βουτυρωνοντας τα και πάλι.
Χαράζουμε την πίτα μας σε τετράγωνα κομμάτια και ψήνουμε σε προθερμασμένο φούρνο στους 180° βαθμούς για 35-40 λεπτά εξαρτάται από τον φούρνο.
Μόλις πάρει ένα ωραίο χρυσαφί χρώμα η πίτα μας είναι έτοιμη.
Ελπίζουμε να την απολαύσετε.

Macaroni bake with filo pastry, recipe:
We will need,
A packet of pasta spaghetti No2 for pastitsio
300 gr crumbled feta cheese
80 gr mozzarella grated
160 gr butter
4 eggs
15 gr olive oil
nutmeg to taste
salt and pepper to taste
1 pack of filo pastry 10-12 sheets approximately.
Method:
In a pan we boil the pasta for as long as the instructions indicate and we strain them.
We leave some humidity in them, we don't strain them too well. We put them back in the pan and we add the 100gr of the butter in. The rest we melt and we mix it with the olive oil as we will need it to sprinkle our filo sheets while laying them.
So, when the 100 gr butter melts in the pasta we add the mozzarella and the nutmeg and we mix well.
We brake the eggs and beat them and we add them in the pan with the pasta. Finally, we add the feta crumbles, salt and pepper to taste and we keep mixing well until it is unified.
When it is unified our mixture it is ready.
We butter one tray and we we lay our filo sheets in it one by one. We make sure to sprinkle them with our butter and olive oil mix every time we lay one of them as they will get nice and crispy this way.
When we lay half of the sheets, we pout our pasta mixture and make it even in the tray.
Then we lay the rest of the filo sheets on top the same way we did the bottom ones.
When all the filo sheets are layed, we cut them in square pieces. This will help our pasta pie to get baked easier.
We bake for 35-40 min depending on the oven in 180 degrees.
When our bake is nice and golden and crispy is ready.
