The BEST Fennel Gratin | Italian Recipe Side Dish
Gratins are pure comfort food and this fennel gratin side dish will amaze you. Fennels have a very particular delicious flavor, and for everyone who still hasn't tried them, please do, because they are an amazingly tasty vegetable. I love cooking fennels in many ways but cooking them au gratin remains my favorite one. Baking fennels in the oven makes them creamy and they really will melt in your mouth, and the breadcrumbs and fresh herbs will add some crunchiness to this dish. Simply amazing!

I know you don't have countless hours to make dinner -- I don't either! When I'm short on time but still have to feed my family, I turn on my broiler and let my oven do the rest of the work! Today I'm making a simple broiled salmon with sliced oranges, fennel, and olives all on one sheet pan. This stunning meal comes together in just 20 minutes, which will give you plenty of time to get out of the kitchen and back to your busy life. Enjoy!
Sarah's Tip of the Day:
Roast navel oranges right along with your salmon. Enjoy them -- skin and all -- on the side or squeeze their juice over your fish.

PREP: 10 MINS TOTAL TIME: 20 MINS
SERVINGS:4
INGREDIENTS
1 navel orange
1 large bulb fennel, cored and thinly sliced, 1/4 cup fronds reserved
1 yellow bell pepper, thinly sliced
2 tablespoons olive oil
4 skinless salmon fillets (4 to 6 ounces each)
Salt and pepper
1/3 cup pitted black olives, quartered
COOK'S NOTE
Fishing for a new salmon recipe? This one-pan delight features Mediterranean flavors that really shine. You can eat the cooked oranges (peel and all) or squeeze the juice over the fish.
DIRECTIONS
STEP 1
Heat broiler, with rack 8 inches from heat. Grate 1 tablespoon orange zest, then cut orange into wedges. On a rimmed baking sheet, toss together orange zest and wedges, fennel, bell pepper, and oil and arrange in an even layer. Add salmon and season vegetables and salmon with salt and pepper. Broil until vegetables are browned in spots and salmon is opaque throughout, 8 to 10 minutes. Sprinkle with olives and fennel fronds to serve.
