Pasta Grannies enjoy homemade pizza from Ischia!
Giocanda and Bartolo live on Ischia, and their vegetable market garden has the most wonderful views. It's a great spot for Sunday lunch, which for them is Neapolitan style pizza. Bartolo's recipe for pizza dough is, for every kilo of flour use:
about 500ml tepid water (probably a bit more, he does it by eye and feel)
35ml extra virgin olive oil
6g fresh yeast or 50g of sourdough starter (make your yeast work hard, don't be too generous with it)
tablespoon of salt
Leave to prove once for several hours, before rolling it out.

Domino’s Style Creamy Tomato Pasta Pizza
Ingredients List for “Pizza Dough”:-
¾-cup Luke Warm water (temp. 110 to 115 degree C)
1-tsp Sugar
1-tsp Dry active yeast
½-tsp Salt

2-cup All-purpose Flour/Maida

Home Made Pizza & Pasta Sauce Recipe | Chef Sanjyot Keer
Written recipe for Homemade pizza and pasta sauce
Prep time: 15 mins
Cooking time: 20 mins
Serves: 500 gm
Ingredients:
• Tomatoes 5-6 medium size
• Olive oil 2 tbsp
• Onion 1 medium size (chopped)
• Garlic 4-5 cloves (chopped)
• Salt & pepper to taste
• Red chilli flakes 2 tsp
• Oregano 2 tsp
• Vinegar 1 tsp
Methods:
• Make a cross on the tomato base.
• Set a pan for boiling water and add the tomatoes boil them for 2-3 minutes, immediately transfer to the ice-cold water.
• Peel the skin and roughly chop them. Transfer the chopped tomatoes to a grinding jar and grind to a fine puree. You can keep the tomatoes little chunky as per your taste.
• Set a pan on medium heat, add olive oil, onions and garlic, sauté until onions are translucent.
• Add the tomato puree, salt & pepper to taste, stir and cook for 8-10 minutes until the sauce thickens.
• Add red chilli flakes and oregano, mix well and cook for 2-3 minutes, add vinegar and cook further for 1-2 minutes.
• Cool down the sauce and transfer it to a well sterilized container. You can store it in fridge for 8-10 days and deep freeze it for a month.
• You pure homemade pizza and pasta sauce is ready, use accordingly.

Home-made Pizza & pasta sauce
Prep time – 15 minutes
Cooking time- 20 minutes
Tomatoes 5-6 medium sized
टमाटर 5-6 मध्यम साइज
Make X cut on the tomatoes
टमाटर पर X कट बनाइए
Add in boiling water
उबलते हुए पानी में डालिए
Keep them submerged for 2-3 minutes
2-3 मिनट के लिए पानी में रखिए
Add ice cold water
बर्फ जैसे ठन्डे पानी से धो लीजिए
Peel the skin
टमाटरों को छील लीजिए
Roughly chop the tomatoes
टमाटरों को काट लीजिए
Grind into a paste
टमाटरों को पीस लीजिए
You can keep the tomatoes chunky as per your preference
आप टमाटरों को मोटा मोटा भी रख सकते है
Olive oil 2 tbsp
जैतून का तेल 2 बड़े चम्मच
Onion (Chopped) 1 medium sized
कटा हुआ प्याज 1 मध्यम साइज
Garlic 4-5 cloves
लहसुन 4-5 कालिया
Saute until translucent
नरम होने तक पकाइए
Add the pureed tomatoes
पिसा हुआ टमाटर मिलाइए
Salt to taste

black pepper ¼ tsp
काली मिर्च ¼ छोटा चम्मच
Cook for 8-10 minutes until sauce is thick
8-10 मिनट गाढ़े होने तक पकाइए
Oregano 2 tsp
ऑरेगैनो 2 छोटे चम्मच
Red chilli flakes 2 tsp
रेड चिल्ली फ्लैक्स 2 छोटे चम्मच
Vinegar/citric acid 1 tsp
सिरका/सिट्रिक एसिड 1 छोटा चम्मच
Cool down the sauce
सॉस को ठंडा कर लीजिए
Store in a clean air tight container
सॉस को साफ़ एयर टाइट कंटेनर में रखिए
The sauce will stay good for 10 days in the fridge
सॉस 10 दिनों तक फ्रिज में रख सकतें हैं
Optional: freeze into ice cube trays upto a month

Use as much as required and thaw or reheat in microwave oven

Alfredo Pizza Pasta
Serves 3-4
Recipe in English:
Ingredients:
-Chicken fillets 300g
-Dried oregano ½ tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Onion powder ½ tbs
-Cooking oil 2 tbs
Prepare Alfredo sauce:
-Makhan (Butter) 3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Cream 200ml
-Dried oregano ½ tsp
-Namak (Salt) ¼ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Hot water 1 Cup
-Chicken cube 1
-Cheddar cheese grated ½ Cup
-Spiral pasta 200g (boiled as per pack’s instructions)
-Mozzarella cheese grated ½ Cup or as required
-Dried oregano
-Lal mirch (Red chilli) crushed
Directions:
-Cut chicken fillets from the center.
-In a bowl,add dried oregano,white pepper powder,black pepper crushed,salt and onion powder,mix well and marinate for 15 minutes.
-Sprinkle prepared spice mix on both sides of chicken fillets & set aside.
-In frying pan,add cooking oil and fry chicken fillets form both sides until done (approx. 8-10 minutes) then cut into cubes & set aside.
Prepare Alfredo sauce:
-In a saucepan,add butter and let it melt.
-Add garlic,mix well and cook for 1 minute.
-On low flame,add cream,dried oregano,salt,black pepper crushed,whisk well and cook for 1-2 minutes.
-In hot water,add chicken cube and mix well.
-Now add it in pot,whisk continuously and cook on low flame for 2 minutes.
-Add cheddar cheese,whisk continuously and cook until cheese melts & set aside.
-Grease baking dish with oil,add boiled spiral pasta,pour alfredo sauce,add chicken cubes and stir slightly.
-Add mozzarella cheese,dried oregano and red chilli crushed.
-Bake in preheated oven at 200 C for 10 minutes (top grill).

-Frying pan mein cooking oil dal dein aur chicken fillets ko dono sides sa fry ker lein (approx. 8-10 minutes) phir cubes mein cut karein & side per rakh dein.
Prepare Alfredo sauce:
-Saucepan mein makhan dal ker melt karein.
-Lehsan dal ker ache tarhan mix karein aur 1 minute kliya paka lein.
-Flame halka karein,cream,dried oregano,namak aur kali mirch crushed dal ker ache tarhan whisk karein aur 1-2 minutes kliya paka lein.
-Garam pani mein chicken cube dal ker ache tarhan mix ker lein.
-Ab pot mein dal ker musalsal whisk kertay rahein aur halki ancch per 2 minutes kliya paka lein.
-Cheddar cheese dal ker musalsal whisk kertay rahein aur cheese melt ho janay tak paka lein & side per rakh dein.
-Baking dish ko oil sa grease karein,boiled spiral pasta,alfredo sauce aur chicken cubes dal ker mix ker slightly stir ker lein.
-Mozzarella cheese,dried oregano aur lal mirch crushed dal dein.
-Preheated oven mein 200 C per 10 minutes kliya bake ker lein (top grill).
