How To make Pasta Stuffed Pizza Style
30 Jumbo Shells -- OR...
13 -Manicotti Shells, uncooked
3 md Zucchini -- grated
2 ts Garlic powder
1 c Italian-style bread crumbs
1 1/2 oz Pepperoni slices
- torn into small pieces 1 lg Egg white
SAUCE:
3 c Low-sodium tomato sauce
1 t Dried oregano
1 t Dried basil
3 oz Part-skim mozzarella cheese
-- grated 1/4 c Grated Parmesan cheese
Prepare pasta according to package directions. While pasta is cooking, preheat oven to 450 degrees F. Toss the zucchini with the garlic powder and put it into a colander. Let it sit 5 minutes and then squeeze out as much moisture as possible. In a large bowl, mix zucchini mixture with bread crumbs, pepperoni and egg white, stirring well. In a medium mixing bowl, stir together the ingredients for the sauce. When pasta is done, drain well. Rinse with cold water and drain again. Stuff the shells with the filling mixture and arrange them in a 9 x 13 x 2-inch pan. Spoon the sauce over pasta and sprinkle with the mozzarella and Parmesan cheeses. Bake uncovered 15 to 20 minutes or until the cheese has melted.

In fact, I'd argue that, if properly executed, it has the best elements from every pizza out there. On one hand, you have the cheesy deliciousness you'd look for in any pizza. On the crust, you've got deep caramelization from the sugars in the tomato sauce and the cheese near the edges. And, of course, the dough (depending on what you use) provides a fantastic flavor and chewiness.

▪375g or 3c AP Flour
▪10g or 2t salt
▪40g or 3Tbsp cubed cold butter
▪220g or 1c warm water (90F/32C)
▪6g or 1 1/2t instant yeast
SAUCE (makes enough for 2 pizzas)
▪50g or 3 1/2T butter
▪100g (1 small or ½ large) white onion, grated
▪15-20g or 4-5 cloves garlic, minced
▪1 28oz/800g can crushed tomatoes

This Is NOT Deep Dish! [NY-Style Stuffed Pizza]
Stuffed pizza is a pizza with a layer of cheese and toppings sandwiched between two layers of dough. It is like deep dish pizza, but has a more solid and smooth crust, and has more cheese.
Stuffed pizza is made by stretching a layer of dough onto the bottom and then, a layer of sauce, cheese and toppings is added, followed by another layer of dough. The top crust is sealed around the edges.
Stuffed pizza is typically cooked at a high temperature for a long time, until the crust is golden brown. The result is a hearty and delicious pizza with a thick, cheesy center and a crispy crust that is brushed with a garlic butter sauce.
