PATISHAPTA PITHA|coconut filling| BENGALI TRADITIONAL sweet pancake simple and easy

Patishapta Pithe is one of its kind. One of the favourite pankcake recipes of bengalis. If it is pithe then patishapta is must. Try this simple recipe at home and enjoy the seasonal flavour.

INGREDIENTS:-
For the batter

Plain flour 1cup
Semolina 1/2 cup
Rice flour 2 tbspn
Date jaggery/ sugar 2tbspn
1/2 tspn salt.

COCONUT FILLING

1 to 2 cup grated fresh coconut
Date jaggery half cup
Cardamom powder or seeds
Sugar 2tbsp (use as per your sweetness requirement)

Note: sometimes the filling gets hard if overcooked as sugar hardens when cooled. Then add milk and adjust. The filling must be cooked till the sugar melts.
