Parchment-Baked Chicken 4 Ways
Serves 1
TOMATO PESTO CHICKEN
INGREDIENTS
12x18 inches parchment paper or aluminium foil
1 chicken breast
5 ounces asparagus
1 roma tomato, sliced
2 tablespoons pesto
1 tablespoon olive oil
Salt, to taste
Pepper, to taste
PREPARATION
1. Preheat oven to 400°F/200°C.
2. Fold the parchment paper in half, then open up.
3. Cut the ends of the asparagus and lay them on one half of the parchment paper.
4. Drizzle on oil and sprinkle on salt and pepper.
5. Lay the chicken on the asparagus, season with salt and pepper, and spread on the pesto. Top with tomato slices.
6. Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
7. Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F/75˚C.
8. Enjoy!
BARBEQUE
INGREDIENTS
Parchment paper or aluminium foil, 12x18 inches
1 chicken breast
1 small potato, sliced
1/4 onion, sliced
3 tablespoons barbecue sauce
1 tablespoon olive oil
Salt, to taste
Pepper, to taste
PREPARATION
1. Preheat oven to 400°F/200°C.
2. Fold the parchment paper in half, then open up
3. Quarter the potatoes and thinly slice the onion.
3. On one half, lay down the cut potatoes, drizzle on oil and sprinkle on salt & pepper.
4. Lay the chicken on the potatoes, season with salt and pepper and spread on the barbecue sauce. Top with sliced onions.
5. Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
6. Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F/75˚C.
7. Enjoy!
GARLIC PARMESAN CHICKEN
INGREDIENTS
Parchment paper or aluminium foil, 12x18 inches
1 chicken breast
1/2 zucchini, sliced
1 clove garlic, minced
2 tablespoons butter
2 tablespoons parmesan
Salt, to taste
Pepper, to taste
PREPARATION
1. Preheat oven to 400°F/200°C.
2. Fold the parchment paper in half, then open up.
3. Slice the zucchini into rounds and lay them on one half of the parchment paper.
4. Mix the minced garlic and butter in a small bowl and spoon half of the garlic butter on top of the zucchini. Sprinkle with salt and pepper.
5. Lay the chicken on the zucchini, season with salt and pepper and spoon on the rest of the garlic butter. Top with parmesan.
6. Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
7. Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F/75˚C.
8. Enjoy!
FAJITA CHICKEN
INGREDIENTS
Parchment paper or aluminium foil, 12x18 inches
1 chicken breast
1/2 red pepper, sliced
1/2 yellow pepper sliced
1/4 red onion, sliced
3 tablespoons salsa
1 tablespoon Mexican cheese blend
1 tablespoon olive oil
Salt, to taste
Pepper, to taste
PREPARATION
1. Preheat oven to 400°F/200°C.
2. Fold the parchment paper in half, then open up.
3. Thinly Slice the peppers and onion and lay them on one half of the parchment paper.
4. Drizzle on oil and sprinkle on salt & pepper.
5. Lay the chicken on the peppers, season with salt and pepper, and spoon on salsa. Top with cheese.
6. Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
7. Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F/75˚C.

You’ll need
600g chicken
½ tsp ground black pepper
1 tsp ground red pepper
2-3 tbsp olive oil
3 carrots
2 long red peppers
1 potato
10-15 shallots
1 cup peas
2-3 cloves garlic
1 tbsp tomato paste
120 ml hot water
1 tsp salt
Here’s how
1. Combine 600g of chicken, ½ tsp of ground black pepper, 1 tsp of ground red pepper and 2-3 tbsp of olive oil in a shallow dish.
2. Cover with cling film and place in the fridge to marinate for 1-2 hours.
3. Cut the peeled carrots and potato into small cubes. Dice the red peppers into small pieces.
4. Transfer marinated chicken into a hot skillet and saute over medium heat on each side until cooked through.
5. Add the shallots, chopped carrots, potatoes, red peppers and 1 cup of peas. Stir until well blended.
6. Add 2-3 cloves of garlic and 1 tbsp tomato paste and give it a good stir.
7. Add 120 ml of hot water and 1 tsp salt. Give it another quick stir, then remove from the heat.
8. Place a sheet of parchment paper on your counter top and place the chicken and vegetables in the center of the parchment paper.
9. Fold the parchment paper on top of the chicken from the two edges. Fold the other edges of the paper together, pressing firmly as you roll, to close tightly.
10. Place the rectangular packet on the baking sheet.
11. Bake in the preheated oven to 180 degrees about 20-25 minutes.
12. Remove from the oven, and very carefully open the packets, watching out for the steam.
13. Serve immediately. Enjoy!

Foil Chicken
For 1 kg Chicken
For the Chicken Marination
1 cup yoghurt (stain all the water out)
2 tbsp Ginger Garlic paste
1 Tsp Kashmiri red chilli powder
1 Tsp Chaat Masala powder
1/2 Tsp black pepper powder
1 Tsp Garam masala powder
1/2 Tsp Black salt
1 Tsp Tandoori Masala Powder
1 Tsp Dried fenugreek leaves( Kasuri methi)
Salt to Taste
1/4th tsp orange red food colour
1 Tbsp Lemon juice
1 Tbsp Butter
1 Tbsp Oil
Marinate All The ingredients well with the chicken.
Refrigerate for 1 or 2 hours then roast it well in a pan adding in very little oil and cook the chicken well.
FOR THE GRAVY:-
3 Tbsp Oil
2 Tbsp Chopped Ginger And Garlic
1 Tsp Kashmiri red chilli powder
5/6 Tbsp Cashew Paste
1/2 cup water
Salt to taste
1 tsp garam masala powder
1 tsp chaat masala powder
1/2 tsp black pepper powder
Cook the gravy for 10/15 mins in low flame
Then add 4 tomatoes puree (strain the puree well)
1/2 cup water
1 Tbsp chilli sauce
1 Tbsp Tomato Sauce
1 Tsp Shezwan Chutney
Cook for 10 mins on low flame
Add in 3 Tbsp of Fresh cream or malai
Cook until the gravy is well cooked on medium to low flame.
Take a kadhai add in little oil then add the remaining masala of the marinated chicken(This is an optional step you can even skip this by just mixing in the gravy and chicken), then add in the gravy, Now Add in the roasted chicken pieces to the gravy and mix them well adding in some chopped green coriander leaves and mixing them well again.
Now give coal smoke to the chicken and gravy together for 5 mins.
Wrap one piece of chicken adding in little gravy into a foil paper.
Now give gas flames heat to the foiled chicken for 1/2 minutes only. You can brush a little oil if you feel the need to.
Serve hot with some green Chutney and Onions.
