How To make Papaya Tomatillo Relish
1 tb Salad oil
1/2 Small onion, thinly sliced
1/4 ts Ground cinnamon
1/8 ts Cayenne pepper
1 lb Tomatillos, finely chopped
1 sm Papaya cut 1/4 inch chunks
1/3 c Cider vinegar
1/4 c Packed brown sugar
1/4 c Dried currants
Sweet papayas and tart tomatillos combine in this unique fruit relish. Serve hot or cold with lamb, pork, hamburgers, stews, curries. Heat oil in a wide frying pan over medium heat. Add onion, cinnamon and cayenne pepper. Cook, stirring often, until onion is soft - about 7 min. Add tomatillos, papaya, vinegar, sugar and currants. Bring to a boil over high heat; then boil uncovered stirring occasionally, until liquid has evaporated. Pack into hot half-pint containers or into a refrigerator container. Cover tightly. Makes about 2 half-pints. Storage time up to 3 weeks in refrigerator. 1/4 cup serving 81 calories 1 g protein, 16 g carbohydrates, 2 g total fat,
3 mg sodium.

Keto Crab Cakes
Serves 4 as appetizer/2 as entree
1 LB Jumbo Lump or Lump Crab Meat (picked through for shells)
1 1/2 TB Red bell pepper (finely diced)
1 1/2 TB shallots (finely diced)
1 1/2 TB celery (finely diced)
1 TB fresh garlic (finely diced)
1 scallion (thinly sliced white and green parts)
2 TB fresh parsley (chopped)
1/2 Cup pork rinds (crushed in food processor)
1 TSP Cayenne Pepper
1 egg (lightly beaten)
1 TSP lemon zest
Pink Himalayan or kosher salt
Fresh black pepper
Extra virgin olive oil or avocado oil
Grass fed butter
Coconut flour (optional)
Directions:
Heat oven to 375 degrees
Add red bell pepper, shallots, celery and garlic to sauté pan with cold oil
Heat and sauté for 1-2 minutes on high heat without browning or burning the garlic
Season lightly with salt and pepper and set aside to cool
In a bowl, combine crab meat, cool vegetable mix, scallions, parsley, pork rinds, old bay, egg, Caesar & hot sauce if you’re using.
Gently mix thoroughly careful to keep the crab meat intact.
If the mix is too wet and you can’t easily for a party, you can add some coconut flour or grated Parmesan cheese to help bind your crab mix.
** Be careful with coconut flour as it’s extremely absorbent of moisture so if you use too much it will yield a dry crab cake.
Form a small crab cake and sauté in oil for 1 minute per side. Taste the crab cake for seasoning and the adjust your crab mix if necessary.
Form 4 even crab cakes.
Heat a large oven resistant sauté pan on the stove.
When pan is hot but not smoking add oil and crab cakes in a singular without crowding the pan.
Cool for 2-3 minutes on medium heat then add 2 TB of grass fed butter.
When the butter melts gently flip crab cakes over using an offset or fish spatula and place the whole pan in the oven for 8 minutes.
Remove pan from the oven and remove cakes onto a plate with paper towels to rest.
Serve with our Tomatillo avocado relish
Papaya Avocado Relish
½ cup, diced papaya
1 ripe Haas Avocado (large diced)
2 medium tomatillos (medium dice)
2 TB red onion (fine dice)
1 TB Jalapeño (fine dice)
Juice of 1 lime
2 TB extra virgin olive oil
Salt and pepper to taste
Directions:
Mix all ingredients in a bowl.
Season to taste adding more lime, salt and pepper if necessary.
Enjoy with crab cakes or as topping for favorite taco OMG yummmmm
