The Easiest Sweet and Sour Sauce Recipe | Sweet and Sour Shrimp Recipe
This recipe is probably one of the easiest ways I make sweet and sour sauce. Today I am making sweet and sour shrimp, but I also like to make this sauce for sweet and sour chicken.

INGREDIENTS
1 lb (454 g) extra large shrimp
1/4 tsp salt
1/4 tsp white pepper
1 cup (137 g) fresh pineapple (optional)
1 cup (87 g) chopped onion
1/2 cup (53 g) chopped bell pepper
BATTER
1/2 cup (66 g) all purpose flour
1/4 cup (34 g) corn starch
1/4 tsp granulated onion powder
1/4 tsp salt
4 oz (118 mL) cold mineral or sparkling water
SWEET AND SOUR SAUCE
1/3 cup ( 95 g) apricot preserve
1 Tbsp (15 g) tomato paste
2.6 oz (77 mL) water
1 Tbsp (15 mL) distilled white vinegar
2 oz (60 mL) cold water *for slurry
2 tsp corn starch *for slurry
- In a bowl combine salt and white pepper and thawed cleaned shrimp
- In a separate bowl combine flour, cornstarch, salt and onion powder
- Then add mineral sparkling water to flour/cornstarch
- Mix until smooth and combined well
- Then add shrimp to batter and coat well
- Preheat fry oil to at least 325 ºF /162 ºC
- Once fry oil is heated add battered shrimp to oil and fry for 1 minute
- Be sure to not over crowd frying pan and try to fry in batches if needed
- After frying and removing all of the shrimp from pan, fry the shrimp again for 1 or 2 minutes using the double fry method
- Cook time will vary depending on the temperature of fry oil and shrimp
- Place doubled fried shrimp on wire rack and set aside
- Using a medium heat, your skillet or wok then add 2 Tbsp of cooking oil
- Quickly sauté onions and peppers then remove from pan
- In the same pan add apricot preserve and tomato paste
- Cook for a minute or until well combined
- Next add water, vinegar and continue to combine well
- In a small bowl combine cold water and cornstarch to make a slurry
- Add cornstarch slurry to sauce and combine until thickened
- Turn off heat, add onions, peppers, pineapple, fried shrimp, combine then serve

Chicken Marinade:
400g Chicken Thighs (cut into 18 pieces, approx. 1/2 inch to 3/4 inch)
1 Large Egg
2 Teaspoons Chinese Cooking Wine
1 Tablespoon Light Soy Sauce
1 Teaspoon Pure Sesame Oil
2 Large Teaspoons Cornstarch (for chicken marinade)
3/4 Cup Cornstarch (to coat chicken)
Sauce:
5 Tablespoons Tomato Ketchup
5 Tablespoons Brown Sugar (can substitute with white sugar)
3 Tablespoons White Vinegar
2 Tablespoons Water
2 Teaspoons Worcestershire Sauce
1 Teaspoon MSG (optional)

300g chicken thighs / belly pork / pork shoulder steaks
1 egg
1 large bowl seasoned corn flour
The Marinade
Salt to taste
Pepper to taste
Sesame oil
½ teaspoon sugar
Light Soy sauce
The Sauce
4 tablespoons tomato ketchup
4 tablespoons vinegar
4 tablespoons sugar
Dark soy sauce
Optional Vegetables
1 onion
1 tin of pineapple or 200g fresh pineapple
1 green pepper
