How To make One Minute Cookies
2 c Sugar
1/2 c Cocoa
1/2 c Milk
1/2 c Margarine
2 1/2 c Oats, rolled (raw)
1/4 c Peanut butter
1 1/2 c Coconut
1 ts Vanilla
Recipe by: Diane Maultsby Mix sugar, cocoa, milk and margarine in a pan. Boil one minute after mixture comes to a full boil. Remove from heat. Quickly mix in all other ingredients. Drop by teaspoonful on wax paper. Let cool. Makes about 3-1/2 dozen. -----

How to make cookies in only 1 minute???? In this video you'll learn how to make 1-minute Microwave Cookies! We’ll make 3 Easy Gluten-free & Dairy-free Cookie Recipes. We make a Brownie Cookie, Salted Caramel Cookie and an Oatmeal-Raisin Cookie!???? They are called 1-minute cookies because they take less than a minute to cook in the microwave. These cookies are a perfect treat when you suddenly crave something sweet. All of these recipes are gluten-free & dairy-free! However, if you aren’t coeliac or intolerant to gluten, you can of course use regular flour in these recipes!
All microwaves are different, so the cook time can be anywhere between 40 seconds to 1 minute and 15 seconds. I recommend checking the cookie after 50 seconds and then cooking for a few seconds more if needed. When cooking cookies in the microwave, you have to be very careful not to overcook them! Otherwise, they will turn out very hard! When you take the cookies out of the microwave they are usually quite soft, so allow them to set and cool down for a few minutes before eating. Enjoy!
Brownie Cookie:
1 egg yolk
1-2 tablespoons maple syrup
1 tablespoon peanut butter
1 tablespoon cacao powder
1-2 tablespoons gluten-free flour (add only if the batter looks too loose)
1 tablespoon dark chocolate chips
1. Mix the wet ingredients together
2. Add the cacao powder (and flour if needed)
3. Spread on a plate lined with parchment paper
4. Cook in the microwave for 40-50 seconds (800W). You can also bake this in the oven at 180 Celsius degrees (350 in Fahrenheit) for about 10 minutes
Oatmeal-Raisin Cookie:
1 egg yolk
1/2 mashed banana
1 tablespoon peanut butter
optional: 1 tablespoon maple syrup
3 tablespoons gluten-free oats or buckwheat flakes
2-3 tablespoons gluten-free flour mix
pinch of cinnamon
2 tablespoons raisins
1. Mix the egg yolk, banana, peanut butter and maple syrup together
2. Add the oats, the flour and cinnamon and stir until combined
3. Fold in the raisins (save some for topping if you like)
4. Spread the mixture on a plate lined with parchment paper
5. Cook in the microwave for about 1 minute (800W) or bake in the oven at 180 Celsius degrees (350 in Fahrenheit) for about 10 minutes
Salted Caramel Cookie:
1 egg yolk
1-2 tablespoons maple syrup
1 tablespoon peanut butter
1/2 teaspoon vanilla extract
3-4 tablespoons gluten-free oat flour or almond flour
1/2 teaspoon cinnamon
pinch of salt
Caramel topping:
2 teaspoons peanut butter
2 teaspoons maple syrup
sea salt flakes
1. Mix the egg yolk, maple syrup, peanut butter and vanilla extract together
2. Add the flour, cinnamon and salt and stir until combined
3. Spread the mixture on a plate lined with parchment paper
4. Cook in the microwave for 45-60 seconds or bake in the oven at 180 Celsius degrees/350 in Fahrenheit for about 10 minutes
5. Mix the peanut butter and maple syrup together and spread the caramel topping on top of the cookie when it has cooled down a little bit
6. Sprinkle some sea salt flakes on top and enjoy!:)

Equipment I used in this recipe:
MEASURING CUPS:
Makes 14 large cookies or 16-18 medium sized
Ingredients:
1/2 cup (100g) Brown sugar, packed
1/4 cup (50g) White sugar
1/2 cup (115g) Unsalted butter, softened
1 large Egg
2 teaspoons Vanilla extract
1½ (190g) All-purpose flour
3/4 teaspoon Baking soda
1/2 teaspoon Salt
1 cup (160g) Chocolate chips or less if you prefer
Directions:
1. In a large bowl, beat softened butter, brown sugar and white sugar. Beat until creamy, about 2 minutes.
2. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
3. In a separate bowl mix flour, baking soda and salt.
4. Add flour mixture into the butter mixture. 1/2 at the time, mix until combined.
5. Stir in chocolate chips.
6. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
7. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
8. Scoop the dough onto a prepared baking sheet, leaving at least 3 inches (7.5 cm) of space between the cookies.
9. Refrigerate for 30-40 minutes.
10. Bake for 10-12 minutes, or until slightly golden around the edges.
11. Allow to cool before serving.

Once it comes out of the microwave it should be very soft. Allow the cookie to cool slightly for 5 minutes to allow it to set before eating. Enjoy warm. DO NOT over bake! Please be precise and use the exact amounts in the recipe.
