How To make Old Style Enchiladas
2 lb Hamburger
16 oz Can tomatoes
2 Lg. onions, chopped separate
16 oz Can kidney beans, drained
4 tb Chili powder (adjust to tast
1 ts Sugar
1 ts Salt and pepper to taste
1 Pkg. corn tortillas
1 lb Cheese, grated
1-2 c Oil for cooking corn tortillas Brown hamburger and 1 chopped onion
(add 2 cloves garlic, chopped, if desired) and drain. Add tomatoes, crushed, kidney beans and spices. Simmer. Heat oil, and cook tortillas to desired degree. (Soft seems to work best) Drain on paper towels. Put 1 tortilla on plate, spoon "sauce" over it and sprinkle some of raw onion and cheese on sauce. Put on another tortilla and repeat untill large enough for you. Stop with layer of onion and cheese.

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

2 tbsp (30 ml) vegetable oil
1 small onion,chopped
1 tbsp (10g) flour
2 tsp (6g) chili powder
1/2 cup (120g) tomato paste
2 cups (500ml) water
1/2 tsp (1g) ground cumin
1/2 tsp (1g) ground coriander
1/2 tsp (1g) oregano
1 tsp (5g) salt
1 lbs ground meat (beef, chicken)
2 cups shredded cheese( i use cheddar and mozarella ).

7 oz can green chilies
2 beef bouillon cubes
1 tsp black pepper
1 tsp cilantro
½ tsp cumin
1 tsp chili powder
1 tsp paprika
Topping:
1 tomato
1 avocado
sour cream
shredded lettuce
12 oz shredded cheddar
Sauce:
1/4 cup butter
1/4 cup flour
1 tsp paprika
1 tsp chili powder
3 beef bouillon cubes
1 tsp cilantro
1 tsp cumin
1 tsp pepper
2 1/4 cup water
Spanish Rice:
2 tblsp butter
½ tsp paprika
½ tsp chili powder
1 cup uncooked rice
1 small onion
1 clove garlic
1 cup diced tomatoes
1 ½ cups water
