2 c Rolled oats 1/2 c Cashews 1 pn Salt 1 tb Oil 1 c Water Using a food processor or a blender, grind together the oats & cashews. Be careful not to over-grind otherwise you will get a butter-like consistency. Add the salt, oil & water & blend thoruoghly. Pour the batter into a waffle iron & leave a few minutes until cooked. Serve with plenty of maple syrup.

How to make vegan carrot cake waffles! Hey guys, I hope you enjoyed this recipe! I made a vegan carrot cake (recipe linked below) a while back and I thought — how amazing would this taste in a waffle?! So I tried it and it tasted just as delicious as I thought it would! ????
Original carrot cake recipe: I just modified this recipe a bit to make waffles!

Carrot cake waffles
2 c flour 1.25 c oats 1 tsp baking soda Pinch of salt 3 tsp baking powder 2 tbsp cinnamon 1/2 c apple sauce 1 c vegan milk (I used homemade cashew milk) 2 tsp vanilla extract 8 room temp medjool dates (boiling not necessary) 1/2 c melted coconut oil 3 chopped carrots Add water as necessary to blend it all up!
Cashew frosting
1 c soaked cashews 1/4 c vegan milk (I used homemade cashew milk) 1/4 c lemon juice 1 tsp vanilla extract 1/4 c maple syrup 1/4 c coconut oil 1/2 tsp salt 12 room temp medjool dates (boiling not necessary)
