Lasagna alla Bolognese is the most famous lasagna in Italy, but it’s not the only one! In the south, particularly in its mother city of Naples, Lasagna alla Napoletana reigns supreme. I’ve been begging Eva for a while to revisit this recipe for a couple of reasons: first, because I think it deserves a dedicated video; and second, because it’s been a looooong time since I’ve had one and I’m dying to try it again...

It's been rainy and cold lately, so I spent the week making lasagna. A better cook could probably do this faster, but I enjoy taking my time when I make food for my friends.

How to Make BEEF LASAGNA Like an Italian
Beef lasagna is a well-loved family meal all over the world and my version with a trio of cheeses, béchamel and homemade tomato passata in a word is: SUBLIME. Between each moist layer of fresh egg pasta sheets is a mixture of veal and pork mince, smothered in sweet tomato sauce. There are two key things to make yours as good as mine – you need patience and quality ingredients, no shredded mozzarella or cheap passata here. No need to thank me, just make it, eat it and share it.

This video shows how even outdoor, wherever you are you can make an excellent lasagna! The technique used to make this lasagna is extraordinary, even if it's not the real Lasagna Bolognese, as they claim, but it doesn't really matter!

This is a lasagna with ground beef (the ground beef is in the ragu bolognese) and a lasagna with bechamel and Parmigiano without ricotta or mozzarella. A traditional family lasagne choice in Italy for Sunday gatherings... and simply the best lasagna recipe ever!
Since spinach lasagna is traditional in this pasta dish, here our Italian pasta granny demonstrates how to make spinach pasta from scratch! Our Italian Grandma uses an Imperia Pasta Machine (a popular Italian brand) to stretch the pasta dough.

SERVES 4-6
For a lasagna with 5 layers in a 20cm x 30 cm or 8in x 11in pan.
For the Ragù Bolognese Sauce (main ingredient for this meat lasagna):
ground beef - 1.25 pounds (600 g)
pancetta (pork belly) - .6 pounds, finely chopped (300 g)
carrot - about one carrot (100 g)
celery - about 3 ribs (100 g)
onion - one medium red or yellow onion (100 g)
butter - about 7 Tablespoons (100 g)
tomato puree - 21 ounces (600 g )— Mutti is a trusted brand
red wine - 1 cup (250 ml) (here, Chianti wine)
whole milk - 2 cups (500 ml)
beef broth or water (optional) - as needed during the simmer
salt - to taste
black pepper - to taste
For the Fresh Spinach Pasta Recipe:
(you may also use pre-made spinach lasagna by Barilla)
eggs - 3
all-purpose flour - 3.5 cups (400g)
fresh spinach - 150g
For the Bechamel Sauce:
whole milk - 4.25 cups (1L)
butter - about 7 Tablespoons (100g )
flour - .75 cups (100g)
nutmeg - to taste
salt - to taste
Making the Lasagna Bolognese (Lasagna Recipe):
Parmigiano Reggiano (NOT parmesan) - 7 ounces (200g)
Ragu Bolognese Sauce (Ragù alla Bolognese) - 35.25 ounces (1000g)
Bechamel - 2 cups+ (500ml)
Spinach Lasagna Noodles - for 5 layers
