How To make Noodles& Cabbage
1/2 c Unsalted butter
- cut into small pieces 8 lg Fresh sage leaves -- -??
1 t -Dried Sage
1 lg Garlic clove
sliced
Salt 1/2 lb Potatoes :
peeled
-cut into 1/2-in cubes 3 lg Leeks -- white parts only,
- quartered and sliced - 3/8-in thick 2 Garlic cloves minced
1/2 ts Red pepper flakes
1 1/2 lb Savoy cabbage :
quartered
- cut into 1/2-in slices 1/2 c Grated Parmesan cheese
- (fresh) 1 lb Fettuccine
1/2 lb Soft cheese -- such as
-Taleggio, Bel Paese -or Fresh Mozzarella, sliced
SLOWLY MELT BUTTER IN HEAVY PAN over low heat with 4 fresh sage leaves or 1/2 teaspoon dried, and the sliced garlic. When garlic is golden brown, remove it, but continue to cook butter until light amber with a distinctly nutty aroma. Scoop foam off top as it rises so that you can see the color, then pour it through strainer lined with layer of cheesecloth. Meanwhile, bring 4 quarts water to boil. Add 1 tablespoon salt and potatoes. Cook 5 to 8 minutes or until potatoes are fairly tender, but just short of being done. Rinse them immediately with cool water and set them in colander to drain, but reserve cooking water for pasta. Chop or crumble remaining sage leaves. Heat half the brown butter in wide saute pan, add leeks, sage, half the minced garlic and red pepper flakes. Cook over medium-low heat until leeks are soft. Add cabbage, 1 teaspoon salt and a little water. It might be necessary to add cabbage in stages, letting some of it cook down before adding rest. Cover pan and simmer until cabbage is cooked. Add Parmesan cheese and season with plenty of freshly ground black pepper and salt, if needed, to make flavors bright and strong. Return reserved cooking water to boil, add pasta and partially cook it, leaving it a little chewier than you would want to eat. Drain in colander, return it to empty pan and toss with rest of butter, remaining minced garlic and potatoes. Season to taste with salt and pepper. Butter casserole and layer half the noodles, half the cabbage and most of sliced cheese. Shake casserole so that vegetables and cheese can slip in among noodles. Add rest of pasta and cheese and finish with layer of cabbage. At this point, dish can be refrigerated until ready to bake. Bake at 425F about 20 minutes or until hot throughout and cheese is melted. If casserole is cold when placed in oven, bake it covered 15 minutes, then remove cover and continue baking until heated through. Serve from baking dish. Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
200g Fresh Egg Noodles or Wheat Noodles
2 Medium Potatoes
200g Green Cabbage
250g Pork Fillet
2 Spring Onions
5g Ginger
4 Cloves Garlic
1 to 2 Tbsp Chilli & Garlic Sauce (or 1 Tbsp dark soy sauce)
Salt to Taste
Method:
1. Finely chop the ginger, garlic and spring onions
2. Cut the potatoes into thin chips
3. Cut the cabbage thinly
4. Cut pork into thin strips
5. Heat 2 Tbsp oil in a wok. Add half spring onions, ginger and garlic and fry for few seconds
6. Add pork, chilli & garlic sauce to the wok and stir-fry for 2 minutes
7. Add the potato chips into the wok and stir-fry for 3 minutes on medium heat
8. Add the cabbage and salt to the wok and stir-fry for 2 minutes
9. Place the noodles on the top of the stir-fry, cover and cook for 10 minutes. Turn the heat to low halfway through cooking
10. Remove lid and toss the contents to mix
11. Add remaining spring onions, stir and serve

Simple cabbage and noodles
HOMEMADE HALUSKI NOODLES (CABBAGE, NOODLES & ALL) COAL REGION COMFORT FOOD
Haluski is a Coal Region favorite and the ultimate cold weather comfort food. While you can cheat with store bought egg noodles, I'm going to show you how to make homemade haluski noodles, from scratch. They're easy, just take some time, about an hour, to prepare. But the flavor is off the charts good!
HALUSKI NOODLES
3 eggs
3 tbs milk
1 tsp salt
2-3 C flour
Beat eggs, salt, and milk.
Add 2 C of flour to start working into a stiff dough.
Add more if needed to get the right stiffness for rolling out.
Let rest 5 minutes.
Roll out to about 1/4 inch thickness and cut into patches or noodles.
Put in boiling water and boil until tender, about 20 minutes.
Drain noodles and let cool a few minutes.
Then add to the cabbage mixture and finish frying.
HALISKI CABBAGE PART
1/2 a head large cabbage, shredded
1 medium onion diced
2 cloves of garlic minced
1 stick of butter
garlic powder if more garlic desired
pepper
In a large pan while pot for boiling noodles comes to boil, melt stick of butter, and add the cabbage, onion and garlic.
Place lid on and on low heat, let steam while making the noodles, stirring occasionally.
When noodles are ready, add to the cabbage mixture and fry until caramelized.
Cabbage should be tender first.
Serve as a meal or with your favorite meats!
