How To make New Year's Day Black Eyed Pea Soup
2 c Black-eyed peas,dried
2 qt Water,more if needed
1 Ham bone with "trimmings"
3 Onion,medium,chopped
2 Bay leaves
1 1/2 ts Salt
1 t Pepper
Wash the beans well in cold water several times, then place in a large, heavy stew pot and cover with water. Allow to soak overnight. The next morning (start early ~ beans like to take their time), pour off the soaking water, and ham bone, 8 cups of water, onion and seasonings. Put on the back of the stove and let simmer gently until beans are very tender, usually about 4 hours. Add more water if needed. Remove and discard ham bone. If the water looks a bit scant pour in 1-2 cups more. When beans are good and tender remove about a cupful of the beans and mash well with some of the bean liquid. (This can be done in a blender, of course.) Return mashed beans to pot, taste for seasoning, and serve steaming hot over freshly cooked white rice.

COLLARD GREEN AND BLACK EYED PEAS RECIPE
1 tsp of olive oil
3 slices of nitrate free bacon (I used 40% less fat), chopped up
1 onion, finely diced
2 cloves of garlic, minced
2 celery stalks, finely diced
2 15oz cans of black-eyed peas and the liquid they come in
2 cups of low sodium chicken broth
4 cups of collard, sliced into ribbons
2 sprigs of thyme
1 tsp of chopped rosemary
2 tbsp of apple cider vinegar
Salt and pepper to taste
DIRECTIONS:
Heat olive oil in a medium stockpot over a medium low heat and then add bacon. Allow to cook for about five minutes or until the bacon is browned.
Add in the onions and a pinch of salt, saute for about 3 minutes or until the onions begin to release some of their liquid before adding in the celery and garlic. Cook all the veggies for another five minutes or until they are fragrant and tender.
Add beans, broth, thyme, and rosemary to the pot. Turn the heat to high and bring to a boil then reduce to a simmer. Once simmering, stir in your greens. Cook for another 10 or fifteen minutes (depending on how tender you like your greens).
Stir in vinegar and season with salt and pepper. Enjoy!

Eating black eyed peas on Old Years Day is a tradition known to many Trinbagonian families and is believed to bring prosperity in the new year. This is part of our west african heritage here in the caribbean that made its way here via slavery and has survived many generations as the tradition is passed on through family and friends. We're keeping the tradition alive by sharing this simple and delicious black eyed peas soup.

I made Black Eyed Pea Soup, a new year's tradition and wanted to share the recipe with you all. Did you make anything special for the first day of the new year? If so, let me know in the comments below.
I N S T R U C T I O N S//
In a dutch oven or large soup pot, heat oil over medium heat. Add sausage slices, onions, carrots and celery and cook for approximately 7-8 minutes or until vegetables are tender, stirring frequently. Add garlic and other spices and stir to combine.
Add chicken broth and tomatoes with juice. Increase heat to high and bring to a boil. Add chopped collards and stir well to combine. Reduce heat to maintain a gentle simmer, cover and simmer for 15-20 minutes or until collard greens are tender. Stir in rinsed black-eyes peas, season with salt and pepper and cook for an additional 5 minutes.

Blackeye Pea Soup
1 /2 pound dry Blackeye peas
soaked 3 hours
2 Smoked turkey wings
2 T. olive oil
2 onions chopped
1 large Bell pepper chopped
4 large garlic cloves minced
7 cups chicken or vegetable stock
1 can fire roasted rotel
1 4 oz. can mild green chilis
1 t. onion powder
1 t. oregano
salt, pepper
1/2 pound kale or any green that you like
2 medium Potatoes cubed
Lacy Cornbread
1 1/2 cups fine ground cornmeal
1 t. Salt
2 cups water
