1 lg Onion; Chopped 1 lg Green Pepper; Chopped or -Half Green and Half Red 1 cn Rotel Chiles & Tomatoes; -Drain, Save Liquid 1 cn Cream of Anything Soup 1 pk Dried Onion Soup 1 lb Smokey Hollow Pork Sausage; -cut 1/2" rings* 1 lb Shrimp; Peel, Devein 2 Chicken Breasts; Skin, Bone, -Cube 2 cn Black-eyed Peas; Drain, -Save Liquid 1 ts Thyme 2 Bay Leaves 1 ts Oregano 1 ts Chili Powder 1 ts Garlic Powder 1/4 lb Butter or Margarine 2 c Raw Long-Grain Rice * Save any left-over meats in the freezer and throw in the pot. Also can add a can of sliced Water chestnuts or peas. Drain and add their liquid to the water. Put rice in the pot and add remaining ingredients. Cut butter in pats and put on top. In q 4-cup measuring cup place soup, tomato juice, black-eyed pea juice (and any other juice you are using) plus enough water to make 4 cups. Pour over rice mixture plus 1 more cup. Cook until liquid is absorbed and rice is tender, but still a little moist. (wrv)

Hoppin' John Southern Cajun Black Eyed Peas Recipe Details: 1 lb of black-eyed peas (soaked) 4 sliced smoked bacon thick-cut or preferred sausage link (Kielbasa Sausage by Hillshire Farms) I used turkey but use preferred bell peppers, red/green diced 2 bay leafs 4-5 garlic cloves 2- 3 Stalks of Celery 1 onion diced black pepper to taste cajun seasoning smoked paprika 1 tsp thyme dried or fresh 1 tbsp chicken bouillon + 4 cups of water combined 3 cups of water parsley fresh garnish

Brown Rice, Black-eyed Peas & Sausage Jambalaya
I was asked by a nurse to make this recipe using brown rice instead of white rice. She helps diabetes patients with their diets. They can't have white rice. I'm also using turkey sausage in link form, 3 links in a pound. It has less fat than beef or pork. Enjoy!
1 lb. link sausage of your choice, cut up and browned in skillet 1 (15.5-oz.) can black-eyed peas with liquid 1 (10.5-oz.) can beef broth 1 cup (8 oz.) brown rice 1/2 stick real butter (not margarine), chopped 1 small onion, chopped 1 small bell pepper, chopped 3 to 5 cloves garlic, chopped ½ cup (3 green onions), chopped (optional) 8 oz. water
Add all ingredients to rice cooker, stir well and press down COOK button. It cooked for 62 minutes, then flipped to WARM. When it flips to WARM cycle, let it stand, covered, for 15 to 20 minutes so the brown rice will get softer, then serve.
