How To make Tasty Black Eyed Pea Salad
1 16oz pkg frozen Black
-eyed peas 2 1/4 c Water
2 tb Chopped pimientos
1/8 ts Liquid Smoke
1/3 c Cider vinegar
1 ts Salt
1/2 ts Red pepper flakes
1 Med. onion chopped
1 Garlic clove, minced
1 ts Olive oil
1/2 c Chopped red Bell pepper
2 c Spinach leaves, torn
4 c Lettuce, torn
1/2 ts Black pepper
1/4 c Monterrey Jack Cheese,
-grated 1 Purple onion, sliced
-in rings 1/2 c Sliced mushrooms, fresh
1/4 c Chopped pecans
Bring 1.5 cups of water to a boil, add the frozen peas, the pimiento, Liquid Smoke, chopped onion, vinegar, and garlic. Reduce to simmer and cook for 45 minutes. Remove from heat, pour off water, and refrigerate for at least 6-8 hours. Combine all other ingredients in a large salad bowl. Mix in the black-eyed peas. Cover and refrigerate for 1 hour or more, then serve. This salad recipe and the others following are originals that i have been making for sometime. Most folk seem to enjoy them. BLACK-EYED PEA SALAD RECIPE
ingredients:
2 15oz cans BLACK-EYED PEAS
3-4 GREEN ONIONS (chopped)
1 stalk CELERY (chopped)
1 CUCUMBER (sliced)
1 CARROT (shredded)
3 PLUM TOMATOES (cut)
zest and juice of 1 LEMON
1 cup CILANTRO (chopped)
4 Tbsp BALSAMIC VINEGAR
2 Tbsp OLIVE OIL
1 ½ tsp CUMIN
½ tsp CHILI POWDER
2-3 Tbsp HONEY
HOT SAUCE (to taste)
SALT and PEPPER to taste
directions:
In a small bowl, mix balsamic vinegar and olive oil. Season with spices. Toss into the beans, onion, vegetables (EXCEPT tomato).
Cover, and chill in the refrigerator at least 1 hour, or overnight....longer the better.
Remove from fridge, mix in tomato, add additional seasonings if desired, and serve.

Lebanese Black-Eyed Beans/ Peas Salad - great for summer feasts & easy to make

Serves 6
A Café Najat favourite, this is a quick & easy low-calorie meal that may count as your 3 out of 5-a-day - what’s more important is that the beans are a great source of protein & fibre.
This also keeps well for 5 days in the fridge so great for lunch on the go. Just be sure not to store in stainless steel bowls as the lemon juice can erode the metal.
???????????? ????????????????
2 & 1/2 cups dried black-eyed beans
2 bay leaves
1.5 ltrs hot water
1 fat garlic clove, crushed
1 tsp salt or to taste
Juice of 3 lemons
1/2 cup EV olive oil
200g (bunch) radishes, chopped bite-size
3 colourful bell peppers, chopped bite-size
Bunch of spring onions, finely chopped
Optional - 2 tbsp finely chopped parsley
????In a deep pot, add dried beans, bay leaves & hot water. Allow beans to soak 1 hour.
???? Place pot on stove & bring water to boiling point - after boiling, lower heat to simmer 30 mins or more until beans are al-denté soft.
????Meanwhile, prepare dressing in large heatproof bowl. Add crushed garlic with salt to make a paste using a pestle or end of rolling pin.
????Add lemon juice & olive oil - set aside. When the beans are cooked, drain & rinse in colendar. Transfer to bowl if still warm & mix with dressing.
???? Add the radishes, bell peppers & spring onions. Taste for seasoning & serve.
