How To make New Year's Day Black Eyed Pea Soup
2 c Black-eyed peas,dried
2 qt Water,more if needed
1 Ham bone with "trimmings"
3 Onion,medium,chopped
2 Bay leaves
1 1/2 ts Salt
1 t Pepper
Wash the beans well in cold water several times, then place in a large, heavy stew pot and cover with water. Allow to soak overnight. The next morning (start early ~ beans like to take their time), pour off the soaking water, and ham bone, 8 cups of water, onion and seasonings. Put on the back of the stove and let simmer gently until beans are very tender, usually about 4 hours. Add more water if needed. Remove and discard ham bone. If the water looks a bit scant pour in 1-2 cups more. When beans are good and tender remove about a cupful of the beans and mash well with some of the bean liquid. (This can be done in a blender, of course.) Return mashed beans to pot, taste for seasoning, and serve steaming hot over freshly cooked white rice.

In West Africa, black eyed peas are considered a good luck charm and are consumed to ward off evil.
The legume was prepared to commemorate special occasions but only became synonymous with old years during slavery. Most likely because enslaved Africans had to prepare a special meal for the slave masters in celebration of the new calendar year.
Here in Trinidad & Tobago, preparing black eyed peas for Old Years to bring prosperity in the new year is a tradition that is alive and well.
A few people have told me in the past they don't like black eyed peas. My response to that is I've never met a pea or bean that I didn't like and my suspicion is that anyone who has a dislike for black eyed peas has never had one prepared properly.
The great thing about this soup recipe is that you can easily use the same herbs, spices and aromatics to make your black eyed peas rice cook up.

2–3 tsp. Creole Kick, plus more to taste

1 lb. (16 ounces) dried Black-Eyed Peas, sorted and rinsed
6 cups Low-Sodium Chicken Stock or Broth
freshly chopped Parsley, as garnish- optional

1 pound Black Eyed Peas rinsed and soaked
1/4 pound bacon chopped
1/2 green bell pepper
1/2 cup celery

2 quarts chicken broth room temp
2 pounds smoked ham hocks or smoked meat of choice
2 jalapeno peppers deseeded and chopped
1/4 cup Cajun seasoning more or less to taste
